Jacques is the epitome of hospitality and a humble entertainer. You can see even with him being interrupted constantly he still goes on with the recipe and throws a couple jokes in as well

Realize one needs a good knife yet he makes it look so simple. I've cut up chickens but how embarrassing I look doing it. He's awesome like no other. Such a pleasant person/chef and teacher.

I absolutely love watching Jacques cook! I watch him a lot here on RU-vid. As a kid, I would watch him and Julia Child on PBS every weekend. The two of them were such a great pair who loved cooking, and showing viewers new things to try in the kitchen. I would just love to meet Jacques and cook with him

Ive done this technique exactly 5 times at college for my apprenticeship.. 4 practice, 1 in an exam.. The ease and pace in which he bones out the carcase into the ballantine is something to behold...

Jacques is the master and is a great lead performer and really hosts need to be supporting or co-lead.. When they try to lead it looks distracting next to him. Watch Jacques and Julia Child that was really fun.

He’s a chef and wonderful well mannered human being. She’s behaving as if she can cook better than anyone and if she would listen to the real chefs she actually may learn to cook something worth eating. Her recipes are like hamburger helper

Jacques knows how to make food appealing in a very simple format. Step by step instructions.....time it takes to cook......awesome results. Especially this chicken dish......tried it recently.......its bananas......and bananas is good. Love it.

Breaking the bone with the back of the knife to protect the edge of your knife is just another way how Jacques Pepin is a REAL CHEF.

@@stndrds79 Hey nice try but it's over 70 years. He started in chef school at 16 and he also cooked way before that in his mother's restaurant when he was a young boy. He is now 86 years old and still cooking. WOW!

Being a Southern woman, I do understand the comments about Rachel's NY accent. But people, please be real. Most people are actually objecting to a confident strong woman who - while working with a legend - remains a confident strong woman. I am told NYers don't back down, they talk a lot, and nothing intimidates them. OK that is Rachel Ray. Get over it. She is adorable. But then I am a confident strong woman myself - albeit from the south so the accent is different - and when I am happy and excited I talk as much and as happily as she does. Does it look to you like she slowed the Chef down? Like he wasn't having a good time sharing his expertise? No. So realize if you have a problem with Rachel Ray - it's your problem, and probably due to you not being comfortable around such a woman. That's OK. There are shy, quiet ladies who deserve a good man too. My question is - can a man who can't watch and enjoy a strong woman interacting with strong people and having fun - can such a man be a gentle man with a shy quiet lady? Or must we just shoot him as useless. Enquiring minds want to know.

You’re capacity for delusion is breathtaking. Thinking a loudmouth obnoxious talk show host is obnoxious doesn’t make you sexist or racist. She wasn’t saying anything that contributed to the viewers’ understanding and her observations were idiotic and banal. There was no engaging banter worth watching in this video which is what the host is supposed to contribute. Loudly joking about her fondness for day drinking (wine and cheese club) and trying to claim the chef was into that was peak Rachel Ray. She honestly just seemed to get in the way of the Chef who was operating on a very unforgiving small block of time and pulling off one of the most complex techniques in butchering Chicken. If I think Steve Harvey mugging for the camera is obnoxious does it mean I don’t like Steve Harvey or that I don’t like successful black men?

On the one hand, yes, Rachel is maybe a little bit out of her element, and yes I did come to the comment to see jokes, but you have to admit you would say some stupid shit too if you were next to THE Jacques Pepin cooking! She’s nervous. And Pepin visiting this show is a great thing. The next great chef could be home from school sick watching this show getting inspired!

Anyone thinking of trying this make sure you have a sharp chef and paring knife. I did this and while skin side looks okay the underside looks chunked. I wish i had made knives from culinary school. My shitty boning knife was as sharp as a butter knife so i resorted to my chef knife and for cutting around articulation joints was very awkward to say the least. Still it took me 10 mins. Probably shave it to 5 with proper sharp knives. Even less more you practice

Just amazing he is he's the best master chef up there besides Julia(rip)and they worked so well together both have a lot of class rather than some chefs who aren't even in their league. I watched his show when he showed how to skin a chicken. I tried afterward and that was an hour of labor. This mater of techniques made it look so easy; it took him like ten minutes but I spent an hour. Never again.

In his 70 + years as a chef (he started at 13) how many chickens do you suppose he has done this to? Your first took you an hour - 6 times what his took him. The good news is - no doubt he has done thousands - you should be very good at it by the time you do your 50th.

this is not a roulade this is a balotine. a roulade is made with a single part of an animal not the whole animal. he even says at 0:45 'this is a galantine or balotine'

Jakub Grzybek no raw chicken carry’s salmonella I don’t know how often people get sick by it tho although I did see a glimpse of what I think was something about a salmonella outbreak I didn’t really watch it was at the gym plus I handle raw chicken a lot and and I’m very care free with my cleaning so idk maybe you’re right
