Nothing better than a nice movie night after a busy day, or, like they say, "Netflix & chill", right? And because I just love everything about it, I decided to share with you guys one of my go-to recipes for those lovely cuddly events, after all, what is a movie without a delicious snack? And if its healthy and homemade, it is even better, am I right?
INGREDIENTS:
500g extra firm tofu
1 teaspoon psyllium husk or psyllium powder
4 tablespoons of water
1/3 cup minced carrots,
1/2 cup minced onions
1 teaspoon chopped parsley
1/4 garlic clove, minced or grated
Salt to taste
Pepper to taste
1 1/2 tablespoon of Vegan butter
2 tablespoons of cornstarch
1/2 cup unsweetened cornflakes
1/2 cup unsweetened vegan milk
1/3 cup of any flour of your choice (I used cornstarch)
METHOD:
Crumble the tofu with your hands, right into a clean towel and squeeze it to remove the all the tofu water.
Add the psyllium just to a ramekin, add the water and whisk very fast
Transfer the squeezed tofu onto tofu a bowl along with the onions, carrots, salt and pepper, psyllium husk, cornstarch and garlic and mix very well to combine all the ingredients.Add the cornflakes to a Ziploc bag and with help of rolling pin or a bottle crush them very finely
As the milk and the to another separate bowls
Shape the nuggets and when they are all shaped, place them in the milk then in the flour or cornstarch, then back to the milk and finally to the crushed cornflakes and put them in a greased baking sheet
Now put them oven at 180°C for 20 minutes flipping them after 10 minutes.
