Buy a digital meat thermometer for $25 and cook to 160+ and you won't have any problems. USDA guidelines for PORK says to cook to 145 these days as trichinosis is no longer a problem in domestic pigs. I have been cooking my pork loin to 145+ which is medium, which is slight pinkish for years with no problems, same for leg of lamb and rack. Cook bear like you cook chicken and turkey, 160+ and well done and you won't have any problems.

Freeze at 5° for a few weeks or heat above 137° and your good. Do both.

The rationale behind why freezing is not recommended is that there has been some evidence from marine mammals in the arctic with specific strains of trichinella to survive freezing temps

my dad got trichinosis from eating an undercooked chunk of bear sausage (while in the process of making the sausage). The meat had been previously frozen for months. Cysts of parasites are much more resilient than the adult parasites. Those suckers got into his muscles and it was very painful before it was all over. The cysts will remain inside of him and if somthing decides to eat him, they will get it also. fun fact lol

I think maybe if you got the freezing temps down to -60 Fahrenheit that might do the trick. But who has a freezer that can go that low just to take a gamble in the end right?

150 isn't enough heat. 165 is minimum cooking temperature for black bear to kill trichonosis for black bear squirrel and pork meat

Believe it dies at 137° but I go to 160.

165 is what the government says, but it's much more complicated than that. If you're doing sous vide you can even bring it down to 145 or lower and still be good because it's all about the length of time it's at a temperature. You can cook even chicken to 136 if you do it sous vide for a couple hours, but the government won't tell you that for liability reasons.

Awesome advice here, and I learned something new! Not being a bear hunter (haven't tried my hand yet) I had no Idea they carried Trich like hogs, now I do and will make sure to cook the hell out of the meat if and when I start bears.

Correct way of wording it would be- ''People eat bear.'' A few kinds of bear, but Black bears are just more prevalent.

Brown bear consume way more meat, a lot of it being carrion than black bears. In coastal areas they'll also eat tons of dead fish.

It comes down to what the bear has been eating prior to being hunted. A bear; be it Black, Brown, Grizzly etc, that has been eating a lot of fish and carrion is gonna taste awful. One that been eating more plant matter especially berries will taste better

I know bears eat even nastier stuff than coyotes. I have heard of bears eating dirty diapers out of garbage cans. Wouldn't that make them taste bad, or would it?

No that is a myth parasites can survive when frozen it doesn't apply to bear meat.

I'm awful late, chances are you already know it by now. But still No. It's not like salmonella. Trichinosis is a species of ringworm that burrows in the muscles of it's host and causes a fucking ton of symptoms and ailments.

They aren't worms at that stage. They are cysts in a host. You eat the meat the cysts hatch in the stomach acids and become worms. The worms travel throughout the body and become cysts in the hosts muscles. Then repeat......
