真正老北京的炙子是鏤空的圓形烤鐺,方便使用炭火。而且炙子越舊越好,因為用得時間長,被油浸透,沒有鐵鏽味。

买个铁板,或者 韩国烧烤盘 (铝的,有涂层,不沾,易清洁),直接架在煤气炉上。

他有三个关键:切肉垂直纹理,腌制到位(三叔是通过酱油、蚝油、香油来封住水分,没信心的话可以拌点地瓜粉和鸡蛋),煎的温度特别高。
