I use a small rubbermaid tote . I make bird cones out of gatorade bottles and screw them to the sides of 2x4s . I grab the butcher scissors and cut the heads off and place them in the bird cones to bleed out . I do 20 at a time . After 20 are in cones , I start skinning and processing the first bird . It takes around 2 minutes a bird when process is complete . I butcher about 100-150 every 2 weeks ..

The Gatorade cones sound pretty ingenious for someone with a high processing rate. I'm hoping to get quail but will be pretty small scale for a while.

Thanks for blocking out that sensitive part, but still being precise on how to do it! Where I live (Sweden) it is mandatory to knock them out first. I'm really new at this and of course ended up with too many roosters. I feel my heart is a bit on the soft side - And I cant find any other instruction on how to do this right for the bird. I would really hate to do it wrong and hurt them instead. So thank you, for just enough details. Now I just need to work with my mind to be able to do it IRL...

Did 1 of mine this morning i kept the Legs. Look, the build-up was the worst bit in my head, when i just got to work its not much different from cleaning a fish. Less blood in fact. I took my second male out as he 2/3rd the size he should be and was causing drama in my flock. I will eat him tonight. Its not as bad as you think. They are livestock not pets to me.

Hold it's neck with an axe. Then hit the axe with a small hammer. It's fast and the blood it's released instantly. Of course the bird can't feel anything.

Save up the legs, when they get 50 or more do sweet and spicy stir fry with them. Done right you will be glad you saved them. Oh and they cook in seconds. Damn good 😊

For people who dont know what to use the leg and back for, you can make a really good game stock. Keep all you leg and back, try to have atleast 2 pound. Put them all on a sheet pan with some sliced onion, carot and leek and broil them until nice and brown but NOT BURNED. Had them to a pot of boiling water and boil it for a good 3-4 hours or more if you can. Strain it through a fine mesh strainer and Let cool over night in the fridge. Next morning remove all the fat from the top and reduce it atleast by half for broth and by 4 to get stock. Poor it in ice cube and freeze it than place it in a ziplock. Perfect to make sauce, stew, pot pie... I usually mix quail legs and backs with rabbit backs to make it. If you want it to be a bit more gelatinous just had a small pork knuckle or turkey wings.

That is a good idea. I make lots of stock from chicken and turkey so I have more than i need on hand usually. But that is a good use for them for sure.

It isn't difficult to do really. At least not physically difficult. But it also isn't fun to do and takes a little bit of mental preparation and the right mind set.

Essentially Kimberly If you raise them well and give them a good life, they only have one bad day. Give thanks for their lives and them feeding your family, and don’t waste the meat, and it will be okay. I use the leftover parts in a maggot bucket to help feed my chickens and keep the fly population down. Nothing goes to waste at my place, if possible. I always have to get in the right mindset before I dispatch any animal. It’s never easy, and I’m always thankful for my animals and them feeding my family.

I make my own stock so for time, I can see skinning, but spatchcock them after skinning and keep the carcass for stock. The feet too

your videos encouraged me to start quailing. i live within the city limits and can not have chickens i switched out my remaining chicken flock for quail. we use our garage to house them. my son always get excited every morning when hes allowed to gather the eggs for breakfast. We thoroughly enjoy raising them its a wonderful way to create our own urban homestead in our community. thank you.

It looks like there's about as much meat on the legs as there is on frog legs. Of course I am of the waste not want not old school. And the life of the bird is worth at least all I can use of it. But that's just me. Live and let live.

I think there is a little more meat on frog legs but not much. I do generally keep the legs myself too. Sometimes I am in a hurry though and just let them go.

Doing it that way is easy to wrap the breasts in bacon. Then take the legs and use them in soup!

I do not throw the legs out. Mine have been fairly meaty so far with nearly as much meat as a chicken wings and tastes better. Also, I clip the the wings at the second joint and filet the breast. The breast bones and wings are then bagged and frozen. When we make quail soup, we boil the meat off of the bones and make a really good stock for quail noodle soup. The breast and legs are BBQ goodness. By the way, I'm still getting about nine eggs per day out of eleven hens without artificial lighting.

Thank you for cutting out the slaughter of the birds . I have to ask you what is your opinion on the videos I have seen of people ripping the head off in one hard pull ? As a bloke from the uk I’m looking for care videos for our quail the best care . @@Slightlyrednecked We processed 9 quail. We used the method from your older quail processing video. The one when you were in your kitchen. That method worked well for us. The quail were delicious, it was our first time cooking and eating them. They taste very good even better than expected. Processing quail is very easy compared to rabbits or chickens. But quail are a LOT of work to raise; too much feed, too much poo, and too much cleanup work of the brooder boxes. I am amazed at how much poo they make for their size!? UGH! I sorted out the males today, I have 21 males and 12 females left. So I saved the biggest healthiest 3 males, and the 12 females. I then put all the other males in another cage and will process this week sometime. All of them are about 12 weeks old now. Luckily it is winter now and we have very little light in the north here, so the males have just now started fighting. (To all of you who shame us who eat them, if we don't kill them, they will kill each other, they are absolutely ruthless to each other.) Happy Quailing.

I'm back into the quail breeding after moving. I dip them in scalding water, feathers practically wipe off, but I like your fast skinning method. Love your channel, I learn so much. I will need new quail blood soon. Thanks for hatch info! I want those eggs from that contest!

I don’t think hitting an animal in the head is more humane. That’s just a trick they like to play with their minds. Don’t you think it hurts them to get hit in the head too? Seems to me that would be abuse to hit them in the head. Just cut off their heads and they are not aware of it at all. I would use the excess parts to make broth.

I am just starting my quail-keeping journey so this would be fantastic! I just got my incubator,and the supples for my brooder/grow out cages. It’s been a struggle for me to leave my job to raise our kids. So I’ve been looking for a hobby,and what better thing than raising quail and providing a good source for my family!

same method as dove - or any small bird I guess. We're looking to start with chicken or quail (leaning toward quail) so this is appreciated information. I'm thinking of keeping the legs and grinding them into the food for our dogs.

6 Months ago I ventured into the quail raising for meat and eggs. I watched many of your videos and even made my quail hutch from your design. The 1st one I thought I would up you one and make my doors bigger. Well to my surprise I see why you made the doors less height-wise. Bob White likes to fly freely. The good news is after losing one. I waited patiently till night and got her back as she roosted on top of the hutch. Later I made another and shortened the height of the door and makes it much easier for them. I then made a smaller door inside of the larger door for the other. Sometimes lessons are learned and reinventing the wheel is not always best. My next batch will be some pharoahs. Any suggestion? ATB Mike and thank you for all your videos they have helped me tremendously. Chickens and quail lay eggs but they totally different care lol.

Thank yoi so much for thia video showing how to stun the bird first. In England uk 🇬🇧 by law we have to stun the birds first but no one shows us how to do it. Ive contacted the human slaughter association and even they didnt know in regards to quail.

Use the breast as you desire, but package the legs, and freeze until you get a good amount. Use the legs to make quail broth, like you would do with chicken. Yes, I want in on the 100 free eggs. Blessing Chris.

Chris, I think the legs are one of the most tasty bits of the quail. Roast a tray of them tossed in olive oil salt and pepper (makes a super nice lunch) I love barbecued quail. Try coating them in yellow mustard & mix in 1 teaspoon of- Corriander seeds Cumin seeds Fennels seeds Caraway seeds 10 whole peppercorns 1 teaspoon of sea salt 1 teaspoon paprika 1/4 teaspoon of cayenne pepper All ground up and sprinkled over the mustard coated quail. Then barbecue till crispy mmmmm 😋

Thanks for the suggestion. That sounds good. I do like them too. I generally just season them heavily with Greek seasoning and then grill them off. But there isn't much too them so it isn't a huge waste if you don't keep them.

Thank you for the contest giveaway, and your link for 15% off isn't working. It was your channel that gave me the confidence to buy our first homestead animals....3 rabbits. Winning this giveaway would be perfect timing for us. My husband and I were blessed to move onto acreage in TX, this past August. No reason you can't save them. I don't find that there is much meat on the legs so it doesn't break my heart to "waste them".

I would love a new bloodline in my coturnix hutches, which are inspired by your building videos! My daughters have even helped me hatch & raise some of our quail the last couple of years, and have been able to show them in 4H as well. Thanks for this video. Processing has been a bit daunting, with so many to do. (We also have Bobwhite and Gambel quail...and button quail too, though they're not worth eating lol. Just pets.) This should make it easier. Winning would be great, but even the 15% off is a good thing! Thanks again, to you and to Hatch!

by far chris you are the only one thats have this process right even when i worked in a seadfood steak house we alway nutralized it before boiling or grilling it but just to put a pair of scissors around it neck is not humane and i think your club method is right this is what i do well what was taught to me by my father he told me every living creature that you kill you will pray to the father for that blood if not you are held accountable for it this is the reason when i dispatch my birds it only me the bird and the most high that knows it

Thanks for the info. I would love some eggs to hatch out some other quail varieties. Raising Jumbo Coturnix now and loving the eggs. I am looking forward to the meat once my next batch of grow outs hatch and start laying. 48 eggs in the incubator at day 8 right now.

Do you have a recommendation for a surprise litter of kits in a hutch I am scared to move the nesting box and I don’t want them to fall down the ramp they are also 12 days old

Don't be scared. You can move them to a more secure place. The mother should still take care of them no problem.

I have been watching you for a couple years now and have already started gathering the materials to start raising quail based on what you have presented in your videos. I also have been watching your rabbit videos as well and will be considering raising rabbits after I get established with quail. I already have a flock of chickens and enjoy watching them every day!
