Trinny Tran She was a one trick pony and was in the bottom a lot of times When she went out of her way to work with sea scallops it took her 20 minutes to open them and she overcooked them in final 3. In my opinion she was not a very quick learner and screwed up a lot of basic things

I grew up in an Italian family. We made traditional handmade ravioli for almost every holiday until my grandmother became too elderly to have so many people in her house. Ravioli is best hand rolled on a floured table/countertop, the dough is to be cut with a wavy roller tool specifically designed to properly cut dough, just the very edges sealed with a floured fork, and chilled before boiling. Those raviolis they made on the show were no doubt good, and close to perfectly handmade, but too many corners cut. The edges would be too thick, and tougher than necessary because of the way it was cut and sealed, and because of the way its rolled the dough wont have the right texture. The refrigeration helps them retain their form as they cook, but isn't nearly as important as cutting and sealing properly, as long as you cook them properly. These are definitely different because of specifics of the dish, and is why I'm not complaining about the second sheet covering the first. Folding the dough over the egg yolk would be almost impossible, and you wouldn't get the round shape it seems they're looking for, but in technique as a whole its far from the "correct" way, as i was taught.
