My rice comes out fluffy without lime. My advice for fluffy rice for white or red rice is to have the rice come to a boiling point then lower the temperature to Low. Perfect rice every time.

Jasmine rice is best for Mexican rice👍🏻I switched from long grain to jasmine rice 13 years ago long grain rice gets mushy and boy does everyone love my Mexican rice. You can use both fresh tomatoes, tomato sauce 🥫 each one is good and different flavor. My mom uses sauce I use both nothing wrong everyone has their own recipe.IF OU WANT YO USE LEMON/LIME GO AHEAD NOTHING WRONG WITH IT! 🙄I’ve never tried lemon/lime but I will now just to try it ! Btw, my rice comes out fluffy EVERYTIME and sometimes I add more liquid for a saucier rice too
@@christopherluvsaidan67 You’d be surprised how many Mexicans use jasmine rice, Long grain is to mushy. I’ve been cooking for 40 years and I know what’s best Long grain isn’t the true Mexican rice, everyone uses what makes they’re rice taste good to them and there families
How about no? Let her cook how she wants and there is nothing wrong with using tomato sauce a lot of Mexicans and Hispanics use canned sauce so what is the big deal?
@@Beaneabean I make a simple basmati rice...for 1 cup of rice: I heat up a 2 Tablespoons of oil Add 1 minced garlic glove for flavor Add 1 Cup of rice once slightly cooked Add 2 cups of water, once boiling Add 1 teaspoon of salt Cover on low for 20 minutes. Do not stir rice at all. Let it cook without disturbing it. This is my version. It works for my family. We love it. Enjoy 👍

I’m just now figuring out how to get my rice fluffy & I’ve been so happy & so proud 🥲 I have a white husband & he doesn’t know any better bless his heart, the flavor has been on point, but the texture has been my struggle & now I’m finally getting it I think I’m finally winning that battle 🤗🇲🇽
Every Mexican family cooks differently. For instance, my mom refuses to use tomato sauce and only uses actual tomatoes. Also, we've never used lime but either way your rice looks good. I think every family makes it a little differently which is cool.
ok ok II LOVE YOUR RECIPES! They are spot on! NOW HERES A MUST TRY...my husband turned me on to adding just a few Rajas de bell pepper. Just do every thing as you do...and float 3 bell pepper rings on top. The flavor is awsome and it protects the rice from burning as it keeps providing condensation. TRY IT!ITS CRAZY GOOD
I wash my rice first, then I Brown the rice and onions cz that helps the rice fluff when u wash your rice, and then I blend fresh tomatoes, onions and fresh garlic for my rice😊
Guess what believe it or not, it can be done with zero oil. I’ve been making it without oil since November bc of health reasons. Just put the rice in and keep stirring and it will change color eventually then add the rest as usual
BUTTER! Is actually the real "secret" ingredient actually... so much fluffier and richer and more flavorful. Problem is butter burns easier so you add it after you toast the rice in a dry skillet right before u add liquids
I would mince that garlic and chop that onion though... 🤔 or better yet blend it.. with the tomato sauce and some Hatch red chile powder and some Mexican oregano. Top it off with some cilantro at the end. New Mexico style!!
There’s nothing “inauthentic” about canned tomatoes 🙄 every grocery story in Mexico sells them, along with the ones in the carton (Del Fuerte). My mom and grandma use fresh OR canned if tomatoes are not in season. Stop trying to out-Mexican this woman!
It’s always interesting to see how others make rice. I’ve seen many different ways. Using lime to precook the rice I’ve done before. You soak the rice in a bowl with water then add a few drops of lime. After about ten minutes you drain the rice and let it dry a bit before cooking. This is a first seeing lime juice squeezed in like that. Also, I chop the onion and garlic and I add some cumin while the rice is toasting.
My mom is Mexican and she never uses tomato sauce or lime. Her rice is on point! She does add some corn or green peas. 👌🏾👌🏾best rice ever! Cilantro, onions and tomatoes and two other ingredients that I can’t share lol
@@mixedmediaartgirl300 .. I agree. My Grandmother always used lard that she made herself and the spice packets. I’ve since cooked this with and without the secret spice packets but they are too chemically and makes me sick so now I sauté peppers and garlic and onions after browning the rice 1/2 way. I also use cilantro and lime and cook the tomatoes but I don’t use canned sauce- FRESH only. I have to brag a bit- I think my rice could rival anyone’s. Mine is WAY better that any eatery including popular food trucks that are completely authentic to the owners origins.

(and thank you for satisfying my curiosity, it takes me YEARS of asking little mexican grandmas and probing internet strangers for the right info to perfect my authentic recipes. The last thing I'd wanna do is cook Mexican food like a gringo, defeats the purpose when you enjoy the traditional tastes and methods so much more than the Americanized watered down version. The best compliment I've ever gotten was my last batch of tamales....I do roofing and other stuff dealing with construction and so I brought my roofers a whole spread of pork tamales with red sauce, el salvadorean crema, guacamole, curdito, and a couple of my favorite hot sauces from el yucateco, and some chalula, and every one of them asked if i was part Mexican or if I had been married to one. They said it was the best they'd had!!! It took me freaking forever to make them, because I, like you, like to do EVERYTHING from scratch, even growing my own peppers. But it seriously took me probably ten years or more to perfect them after speaking with many Mexicans, el salvadoreans, guatemalans, traveling to Mexico, working tons of different food service jobs, internet sleuthing, trial and error, etc etc
I’ve had rice with limón but only added after it was made, no before boiled. I’ll try it next. We all make it differently, there are rice from restaurants I wish I knew how they make them or at least the seasoning. Just because your mom is Mexican and she made it different, does not make it the rule of making Mexican rice, nor the only Mexican to make rice. I’m Mexican and I still can’t say my rice is the way to make it, just because I use everything fresh including seasoning.
My secret ingredient to my Spanish rice is 2 things. Spicy V-8 juice,instead of tomato sauce, and cilantro. And let me tell you,, it's so freaking good. My husband even commented on it and he doesn't comment on any damn thing. Lol
I'm from Lake Charles, half way between Houston and New Orleans. I love delicious rice dishes including chicken and rice, Mexican rice, pork and sausage jambalaya, as well as Asian fried rice. What can I say? I like rice!
I use lemon. The grandkids always tell me how delicious my rice is and what's that secret to the " I want more rice so good delicious flavor,"😅 grandma has her secret in the kitchen recipes it's just a dash of lemon😂😂😂😂
Love this video. I learned to cook the sauce with oil for rice and other dishes. I buy canned tomatoes because the ones in the store be not good. Unless i get some from farmers market in the summer and i can my own. My daughter in love is Mexican and cant make a lot of Mexican dishes especially rice. She learning.
what? limon. obviously you are not from Mexico. My mom was mexican a never in her 50 years of making rice ever put lemon but it was always fluffy. maybe from other areas of mexico.
Me too, jasmine rice, i roast the rice for some recipes like mexican rice. I make so many rice dishes, my rice comes out perfect everytime. When I make the rice in my rice cooker I learned to measure the water to rice with the finger method thanks to the Asian cooks i watched online.
I cook rice but never ever use tomato sauce or lime. But I use fresh tomatoes, onions, garlic, cilantro, chicken broth, salt , pepper. But I guess it work for her.
This looks really good, im gunna try it. Im one of those ppl who prefer jar sause in some recipes and i think this would be one of em ... But unfortunately im all out of basmati rice only have parboiled .... Will this still be ok ???
Justbincase anyone was wondering, the rice was fine. Stillworked out. I added a but of cummin becaise i really like it but other than that did this same recipe. Was delicious. Today ill be using basmati rice tho
