I was on vacation at gulf shores AL and didn’t have any idea what I was doing but I was shore fishing and I had a minnow head rooster tail thing and I caught 15 Spanish mackerel! I now know what they were eating on it was glass minnows and they are really fun fish to catch thanks for the info!

Going on my summers "to make" list for sure. Subbing out Mayo or reducing is something I do all the time too, I find the flavour and textures improve with the use of strained yogurts, clotted creams or sour creams. Nothing wrong with Metric, in Canada we use both systems where they each work best.
Great catch and cook! I think most mackerel are good to eat, you just have to know how to treat it. I want to try that recipe. My better half and I are headed to the Outer Banks in NC this coming weekend. I've got my fingers crossed we can catch something to replicate the dish. Cero has a very clean, less oily/ mild fish taste. Similar to Wahoo. Very tasty, even in the raw presentations. Spanish has a strong fish flavor. Closer in flavor and texture to King Mackerel. Smaller sizes are a bit more mild in flavor.
They are thick here on the west coast if you follow the water tsmps and their pattern. Not uncommon to catch 50 in one outting if you know where they are at.
