You can turn out moist, juicy flavor-packed Pork Chops (or ANY white meat) every time, no matter what size they are or how you're cooking them. Grilled, Smoked, fried in a pan or baked in the oven. While I didn't get a chance to film video of it, I'm going to tell you exactly what I did this time and EVERY time I cook ANY white meat to make sure it's tender, juice and packed with flavor. And you'll get in the first 2 minutes of the video.
But I have a 3rd- and MOST IMPORTANT- tip I'll give you right now. Monitor the internal temperature of your pork chops! You need a good instant read thermometer to do this, but they are worth their weight in gold. Because the biggest reason most white meat comes out dry and tough is because it's overcooked!
Pork Chops should be taken off the grill at around 140 internal temperature and allowed to rest until they reach around 145. That alone will give you moist juicy pork chops. But the other two steps I share in this video will really take it to the next level. So be sure and watch the whole video, and leave me a comment if you have any questions.

Ron, since you dried the chops, you must have used a wet brine. What did you mix into it, please? Thanks!

Hey! Sure, it was water and Kosher Salt, with some brown sugar added.

I grew up with marinated steak tips in Italian dressing then my sister's bf grilled chicken that had been marinating in Italian dressing and I couldn't believe I never thought of it. Now I can't believe I never thought of pork in Italian dressing. He's right people. Don't skip this one . Thanks Ron!

@Joshdr99 it was a great idea brother! Man my wife was absolutely beside herself over how good they were. She seriously could't believe it. Probably the biggest reaction I’ve had from her on a recipe yet, and I’ve had some big ones, lol

Take note, folks. He dried the chops after the marinade. Never put wet anything on the grill. It will steam, and not brown nearly as well.

Good feedback John, thanks. I often do, but sometimes I forget. I’ll definitely be more intentional about that! It should be mentioned every cook, definitely when smoking.
