Puffy pizza dough recipe. This one is super simple and requires no scale. Toss your ingredients in a bowl , mix and let ferment for 24 hours. It’s awesome and super easy.
Ingredients, 2 cups bread/AP flour, 1 cup water, 1 tsp salt, 1/4 tsp active dry yeast and a drizzle of Olive Oil.
Part 2 tomorrow - we bake
We are living on the edge making dough without a scale!

Ingredients 2 cups of flour 1 teaspoon of salt 1/4 teaspoon of active dry yeast 1 cup of water Add your flour and salt into a mixing bowl and whisk . Then add your yeast and your water then mix. Then kneed 2-3 minutes until it forms a mass. Move to a clean bowl and drizzle some olive oil and then kneed for another minute. Then cover with plastic rap and let sit in room temperature to rise for 24hrs. After that time divid equally and fold in half a couple times for each piece (press and turn). Press the seems and cover for 4hrs. Then bake at 350 degrees Celsius or higher till cooked.

My pizza turned out exactly like the one in the video. First time is ever happened, and I’ve been trying to make pizza dough for years. My Only mistake was potentially loading up the pizza with some ham and mushrooms which stopped the entire pizza from rising. Thank you so much for posting this video. Fantastic stuff

I made the same mistake before that prevented the dough from reaching its full airy loftiness. So I started par baking and then add the toppings towards the end

here is a better recipe that I want you to try Biga: 200ml water 3g yeast (use half the amount if using dry yeast) 400g of 00 flour Use the “no stress” method by Vito iacopeli and leave it to rise for an hour and then leave to ferment for 24-48 hours in the fridge, don’t use sugar because it ruins the gluten structure and gives you a false sense of color and it shouldn’t smell overpowering or like beer, that means that it over fermented. then dissolve the biga in 500ml of water and add 30g of salt, then gradually mix in 600g of 00 flour The final consistency should be very smooth once you are done, if it isn’t, then leave it to rest for 5-10 minutes and rework the dough then portion out the dough into 6 portions each weighing 280g and please form a very smooth layer on the surface like a balloon this should ferment for ideally about 4-6 hours at room temperature or overnight if you are using a fridge then use the neopolitan stretching method which forms a thick but incredibly airy crust with a thin base Cook it using a pizza stone at the max temperature of your home oven (with broiler) for about 6 minutes or 430-450 degrees Celsius (800-840 degrees Fahrenheit) with a proper home use pizza oven like an ooni karu or gozney and for no longer than 2 minutes

The best hydration ratio for pizza is 70% water to flour. This will make it lot easier to stretch and better crust.

I make pizza a lot and I always leave my dough to rise not more than 50mins cus it rises too fast and beyond that time it just goes flat and sticky. But this video just made me realize my mistake is that I've been using too much yeast

I raise my dough about 18 hours. Make my dough balls snd proof in fridge another day. This makes peal digestibility from gluten break down. This is why Italian pizza does not make people sick. I also only use Italian stone milled real wheat flour.

HUGE WARNING: when you measure out a teaspoon of salt make sure you use the same type of salt he’s using. One teaspoon of table salt IS NOT equal to one teaspoon of whatever salt he used here. As a general rule you want to stay away from volume measurements when baking and stick to weight. One gram of salt is exactly the same no matter what the volume is. Always use recipes that list grams when baking for consistent and good results, never cups or other volumetric measurements.

I've tried hundreds, really hundreds, of pizza dough recipes. We had our first pizza with your recipe tonight. By far, the best. I will use no other. Now, what is your sauce recommendation? I used a 28 oz. Can of whole, peeled tomatoes. Drained them. Then, broke them up with my hands along with a big swig of EVOO and a teaspoon and a half of salt. It was good, but do you have one better?

I love hearing that. Thank you. I love that tomato sauce recipe you are using. My best advice is to try a bunch of different brands until you have that "moment " with tomatoes. I love the Bianca DiNapoli brand.

Thanks for your reply. I love that brand as well. However, I live in a smaller town and it is not available. When I have ordered it several times from Amazon, the majority of the cans are so severely dented that I have to throw them away. Generally, out of six cans, I can only use two to three. That has happened more than once. One more question, if I may. I froze half of the dough I made for next week. Is it safe for me to proof it overnight on the counter before baking, or should I put it in the refrigerator overnight? Thanks, again, for the best pizza dough recipe in the world.

Make sure the water is the correct temperature for the yeast. As a friend of our oldest son found out that you can kill yeast and their fresh baked bread came out like a brick instead of a poofy and light loaf of bread and their biscuits came out like hockey pucks.

Thank you so much for the recipe that doesn't require 7 oz or more of dry yeast! People don't understand that yeast is harmful and they are so happy seeing their dough rises up in 20 min. , using lots of yeast. The slow fermentation process lowers blood sugar levels, improved digestion, and disease prevention. And for this process you might need very little of dry yeast.

Can the flour mix be stored in the fridge for 48 hours instead of 24 hrs ? So lets say i do the mix on Friday but not doing the actual pizza till Sunday .

I made my first pizza yesterday and it came out pretty good. The recipe I found on a video was 2 cups 00 flour 2 cups bread flour 2 cups water 2tsp salt 1/4tbs of active dry yeast. I don't know if that's a good recipe or not but it didn't taste too bad... The dough was hella sticky though. I let it rest for 6 hours after mixing all the ingredients After 6 hours I separated them into 2 smaller bowls to let sit for another hour. I was told that semolina flour would be best for stretching the dough.. i didn't have any of that so i used a combination of 00 flour and yellow grits... i don't know why... it came out pretty good though...

I will do more with shaping. That is a good idea. IF you allow the dough to rest after you ball it up, it's going to stretch very easily. I need to do a better job explaining that....

We bake it on our Baking Steel Original. Bake time is usually between 4-5 minutes, depends on the style pizza....

The secret weapon is my Baking Steel Original. I preheat my oven with my Steel on the top rack for 1 hour at 500F. Let all that heat absorb into the Steel.
