One theory I could have had would have been that the endermen were evolved in the End realm similarly to how humans evolved in Earth, implying that the endermen look similar to humans, but are not or ever were Homo sapiens to begin with.

I could even come up with a prehistoric history behind the endermen, even depicting that they are also much older than early humans, and figuring out how they gained the ability to teleport, and how they adapted to their environment.
