The TRUTH about WORMS in Fish... Catch Clean Cook (Sea Trout)

Happy new Year! Brook, Ryan and I did a little wade fishing for Sea Trout aka speckled sea trout in the Indian River in Ft. Pierce, Florida. We were using popping corks with live shrimp. Sea trout, like many fish in the Sciaenidae family often contain worms. The most common worm in this fish is the "Poecilancistrium caryophyllum" a type of tapeworm that looks like spaghetti, but is not harmful to humans when ingested both raw and cooked. I show you how to catch, clean and cook this delicious mild flavored fish!

In Minnesota some of our fish have tapeworms. No way would I eat that raw.

Two types of parasitic worms can infect humans: 1. Anisakiasis is caused by ingesting the larvae of several types of roundworm which are found in saltwater fish such as cod, plaice, halibut, rockfish, herring, Pollock, sea bass and flounder. 2. Tapeworm infections occur after ingesting the larvae of diphyllobothrium which is found in freshwater fish such as pike, perch and anadromous (fresh-saltwater) fish such as salmon....trout are anadromous same as salmon.

Just an FYI, the “worms” in those warm water spotted sea trout are larval stage tapeworms so yea you can ingest them and it won’t harm you but don’t try this with the “worms” in Codfish or other cold water fish, those are full grown nematodes and can actually attach themselves to your intestine in some cases

@@JS-cr5fn it's completely edible, you can even eat the fish cooked with the worms still in it bc cooking will kill the worms but most people pull them out. You just don't want to ingest them when the fish is raw and they're still alive

Used to work in a fish house in Florida and we got Sole fillets and cod fillets fresh and there is live worms in it

Even in Norway, (where I'm at) there are most commonly worms in both the intestines, liver, and flesh (fillet) of the Cod (and most other species). This is common, research has also shown, that if there are a high amount of chemicals in the fish (lead and other chemicals from human processes) the worms and parasites can NOT survive. In sum, worms in the fish is actually a good sign, the fish meat is relatively clean from chemicals. We put the fillet in the fridge for 24 hours, and many times the worms will crawl out. (Disgusting yes) but easy to pick out. Just cook the fish well, and all is good. Happy fishing.

Yeaaa I'd definitely stay away from any freshwater worms. Very different than the saltwater ones hes showing here. You also shouldn't eat cold water worms from up North..

Hey guys I posted this recipe on Kelly young channel, but when I saw you guys cooking trout I had to copy and paste it for you guys. Trout is actually the fish my mom and mom mom made this recipe with so had to share with you guys. By the way we also get worms in our trout and we fish out of crystal river. Were allowed 5 per day and 1 over 19in. Hope you guys like the recipe. Heres how we do ours and its incredible. Take foil and line the inside of a cookie sheet as this makes clean cup a snap. Next place a cookie cooling rack inside cookie sheet. This allows all the oil to drip off the fish and leave you a nice golden brown topping. For the most part we use 3 types of fish when doing this method and they are Trout, Red fish and Mangrove snapper. Place your fish on the rack and cover the tops and sides of fish with Kraft mayo. The amount of mayo you used on that trigger fish was about the same as we use. Also please do not get light mayo. The bad oils are all going to cook off and be left in the foil in side the cookie sheet. You can season the fish several different ways but we usually go S&P, Season salt , Cajun seasoning and Paprika. Recently I got turned on to a seasoning by Badia called Complete Seasoning and they sell it at Publix, and let me tell you its killer. Ill add lemon pepper and Lowry's garlic salt with Badia and thats been the new go to for the past few dinners using this method. Turn the oven on broil and place on top rack, should be just a few inches from the broiler. If the fillets are pretty thick drop it down one rack. Broil for 10-12 min. It should start to get Gold brown to kind of a blackened looking color. One thing for sure is the smell in the house will be killer. Hope you guys will give it a try because its one of the best ways to eat those types of fish.

If you want to get all the worms out of the meat, I have a super easy trick. Take a glass baking dish or something like that put your fish fillets in it, then just pour a little bit of Coca-Cola over them, the worms will almost leap out of the meat. Then after a minute remove your fillets rinse them off with water and you're ready to go.

A stringer tip I discovered years ago... run the stringer needle through the top front section of the eye socket and straight across to the other eye. It is much stronger (sometimes trout will rip their jaw and get off). Not only that, surprisingly, they stay alive better & therefore more fresh. With the line through their gills and mouth they have trouble breathing. I also hook bait mullet in this fashion & they last much much longer.

I notice that you suffocate the fish by putting it straight in the eski (cooler) but a great way to put the fish out of it’s misery and preserve the meat from rotting quicker is to 1. Brain the fish with a knife which you know will be done right if it seizes up and then 2. Cutting the throat bleed the fish which preserves the meat longer. I could be wrong about this but when ever you fillet the fish their necks and brains seem in tact, also if you teach this to your community it will help thousands of fishermen to get nicer meat and longer lasting meat whilst also being kind to the fish

Things like trout and flounder you don't need to bleed whiting they don't have much bloodline to begin with flounder and whiting have no bloodline no reason to bleed it at all trout hardly have one either. Throw them in the cooler on ice gets the job done just fine.

Love sea trout! Funny at my age how times have changed. I remember shuffling in the Indian River off Titusville in cutoffs and Converse wadin tennies. Here you are in waders and stuff. But I remember limiting out on trout, and netting crabs and shrimp at the same time. Glad to see Florida's fish stocks being managed. We need the trout to be successful like the redfish were. New Subscriber! FAU? Awesome! I want to know where you were wading. As a chef, nice texture on the fish! Excellent description on the proper structure of a vinaigrette. I would recommend Dijon; it helps to better bind the emulsion. I would encourage you to chiffinade cut Arugula or Culantro, add to the lettuce mix, and GARNISH!

As a family we fished on jetties out west catching opal eye which had worms we’d soak the fillets in strong salt water right after cleaning and the worms would crawl out immediately.. In around 10 minutes the worms had all came out and were nearly dead. Then remove the fillets and store as you normally do.

Awesome dish! One question, where did you learn to cook? I am a freshwater fisherman and your videos have given me a new way to prepare bass and catfish. But I ain’t eating any worms!

I’ve heard so much crap about some dang worms, the natives ate them year round and so do we in Alabama, glad your putting quality information out there because LOTS of people tell you,” ohhh you can’t eat that it has worms” yada yada. You need to start worrying when you catch a 100 fish and they are all worm free(usually a sign of toxic chemicals in the water)
