One piece of advice I rarely seen given - buy mics in pairs*! The exception being you can get away with buying your super star mics as 1-offs (ex u67). Sm57? Buy 2. C414? Buy 2. SDC? Buy a set of 2.

I've tried an the Rode NT1 on acoustic guitar and thought it was just OK. I've always had better luck with small diaphragm condensers on acoustic guitar. The Shure SM137 is great at an affordable price. Of course the SM81 is superb, but it would be 80% of the $500 budget.
