Ingredients:
For Marination:
- 1 kg chicken, cut into pieces
- 1 cup yogurt
- 2 tbsp ginger garlic paste
- 1 tsp Spices n More Turmeric powder
- 4 tbsp Spices n More Biryani Masala
- 1 tsp Spices n More Garam Masala
- Salt to taste
- 2 tsp lemon juice
For Rice:
- 3 cups Basmati rice, washed and soaked
- 6 cups water
- 1 bay leaf
- 4 green cardamom pods
- 4 cloves
- 1 cinnamon stick
- 2 star anise
- Salt to taste
For Biryani Curry:
- 4 onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 cup chopped mint leaves
- 1 cup fried onions (for garnish)
- 1/2 cup milk with a pinch of saffron
- Chopped coriander
- 3 tbsp ghee
- 3 tbsp oil
- 2 bay leaves
- 4 green cardamom pods
- 4 cloves
- 1 cinnamon stick
- 1 star anise
Method:
1. Marinate the Chicken:
- In a large bowl, mix yogurt, ginger garlic paste, turmeric powder, biryani masala, garam masala, salt, lemon juice, and chicken. Marinate for at least 30 minutes.
2. Cook the Rice:
- Boil 6 cups of water with bay leaf, green cardamom, cloves, cinnamon stick, star anise, salt, and a few drops of oil. Add soaked rice and cook until 70% done. Drain and set aside.
3. Prepare the Curry:
- Heat oil and 2 tsp ghee in a large pan. Add bay leaves, green cardamom, cloves, cinnamon stick, and star anise. Add sliced onions and cook until golden brown.
- Add marinated chicken, tomatoes, and chopped coriander.
Cook until the chicken is 80% done.
4. Layer and Cook the Biryani:
- In a heavy-bottomed pan, add a little ghee. Layer with one portion of rice, then add mint leaves, coriander leaves, fried onions, and cooked chicken. Repeat the layering process.
- Drizzle saffron milk over the top. Cover the pan with foil and cook on low flame for at least 30 minutes.
5. Serve:
- Serve hot with raita. Enjoy your delicious chicken biryani!
