Ingredients:
- 2 cups chickpeas (chole), soaked overnight
- 2 onions, pureed
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2-3 cloves
- 1-inch cinnamon stick
- 2-3 cardamom pods
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons Spices N More Chole Masala
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
1. Prepare the Chickpeas:
- Drain the soaked chickpeas and rinse them well. Pressure cook them with enough water and a pinch of salt, bay leaf ,cloves, cinnamon stick, black cardamom cook until 5 whistles. Set aside.
2. Make the Masala:
- Heat oil in a large pan over medium heat.
- Add cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Sauté until fragrant.
- Add onion puree and sauté until golden brown.
- Add ginger-garlic paste and green chilies, and cook for another 2 minutes.
3. Cook the Tomatoes:
- Add the tomato puree to the pan and cook until the oil separates from the mixture.
- Add turmeric powder, Kashmiri chili powder, and Spices N More Chole Masala. Mix well and cook for another 2 minutes.
4. Combine Chickpeas and Masala:
- Add the cooked chickpeas to the pan along with some of the water they were cooked in.
- Stir well to combine and let it simmer for 10-15 minutes, allowing the flavors to blend together.
- Adjust salt to taste and add spices n more garam masala. Mix well and cook for another 2 minutes.
5. Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with lemon wedges on the side. Enjoy your Chana Chole with Rice or Bature.
