This Smokey Split Pea soup is versatile and oh so yummy. Feed your family for less without sacrificing flavor.
1 lb of split peas any color or lentils
1 lb of smoked sausage any kind
6 cups of chicken broth.. add more broth if needed
3 small carrots
1 large onion
6 small /medium garlic cloves
2 small celery stalks
oiive oil to saute veggies
2 large bay leaves
1 tsp herb de provence (substitute thyme, oregano )
1 tsp dried parsley
salt and pepper to taste
1. saute veggies in olive oil add minced garlic last minute of saute
2. add broth and herbs and peas
3. bring to a boil for a few minutes then bring down to simmer
4. add sausage and cover
5. Simmer for up to 40 minutes, test beans halfway of cooking.
