I dont think anthy taking jabs is proof of her being sadistic, more like proof of her having more of a backbone than what anyone even Utena perceived. Its a small rebellion she allows herself while being forced to play the rose bride. When she bids utena goodbye in the first arc where she was defeated by Touga, Anthy wasn't smirking but instead was genuinely sad that she is now forced to say the same things she had said to Saionji
