Regarding pre-shredded cheese, I’ve mainly noticed a visual difference when using Sargento pre-shredded cheddar…the edges don’t look quite right when melted. It’s hard to describe…the edges don’t look creamy but instead seems to cling to itself…not sure if other brands do this and not sure that the taste is affected…anyway that’s my 2 cents…
I think that the brave matters. Some brands use cellulose as an anti-caking agent. I’ve noticed that brands that use cellulose tend to not melt as well as those without it. When I get pre-shredded cheese I always buy Tillamook because it doesn’t contain cellulose and it melts just as well as freshly shredded cheeses.
Nice vid.....try it with some chopped white onion.....nice big pieces. It comes out with some texture and a nice muted onion taste, it's not overpowering.....so good!
