A new Mexican restaurant in town actually has a birria pizza! Its a standard pizza crust with a really reduced down consommé for the sauce and then the shredded birria meat, cheese, and topped with cilantro and onions... its FREAKING DELICIOUS!! Great video as always!
Looks phenomenal! Gonna be doing smoked beef cheek tacos this weekend with salsa macha and an avocado crema / tomatillo salsa / mozzarella so not a million miles away when it comes to flavour profile. That bone marrow broth though... gonna have to give this a try!
Great looking Cook. My Wife worked in the restaurant industry for years. At her last employment before she passed she was given two titles. One was The Dessert Queen. That was her forte. All home made. Second was the Queen of Quesadilla's. I am not getting into the pizza dishes she created but two are still on the menu at the restaurant. One of My Favorite is what is named a Spudza Pizza. She would take left overs at shifts end or during a shift and create these mouth watering creations to feed the crew after a long evening of hard work in the kitchen. I some times got lucky to have some make it home and beg to have her make it again at home.

So the way you've made your Birria is the exact way I make Texas Chili (Bowl of Red).....except I use beef broth instead of water, and chuck roast in place from the shin.
Looks lovely - didnt realise white onion was different to our brown - are they available in the UK - saw them in Walmart last week and was surprised that they were white on the outside
