Ingredients
1300 g water
300 g pumpkin, skin and seeds removed, cut in thin slices
cooking oil, for greasing
100 g sugar, adjust to taste
30 g butter
250 g tapioca flour
80 g fresh coconut milk
2 pinch salt
250 g fresh grated coconut
coconut oil
Preparation
1. Place 500 g water in mixing bowl. Set Varoma dish into position, add pumpkin slices into Varoma dish. Close Varoma lid and steam 15 min/Varoma/speed 2 until soften. In the meantime, grease a square cake tin (15 cm x 15 cm x 5 cm) with a layer of cooking oil. Remove Varoma and set aside. Empty mixing bowl.
2. Place steamed pumpkin slices, sugar, butter, tapioca flour, coconut milk, and a pinch of salt in mixing bowl, blend 30 sec/speed 6 until smooth. Transfer to prepared square cake tin and flatten surface with spatula. Cover with heat-resistant cling film and place in Varoma dish. Clean mixing bowl.
3. Place 800 g water in mixing bowl, set Varoma dish with square cake tin into position. Insert Varoma tray, add grated coconut and a pinch of salt into it and gently mix with spatula. Close Varoma lid and steam 10 min/Varoma/speed 2. Carefully open Varoma lid, remove Varoma tray with grated coconut and set aside.
4. Close Varoma lid, continue to steam 20 min/Varoma/speed 2. Set aside
to cool completely. Grease a sharp knife with coconut oil. Cut the steamed
pumpkin kuih in cubes with the greased sharp knife and coat with reserved
grated coconut before serving.
