Low carb and good. Used ground chicken and creole and blackening seasoning. Made patties larger, 5 min each side medium heat. Ate with horseradish mustard. Cheddar cheese and coconut flour instead as well.
You could also sub the flour entirely with crushed pork rinds I suspect to skip the nut and especially seed altogether! Great recipe otherwise, will try it with porkrinds tonight!
What a great recipe! So easy to make! I did not have sharp cheddar nor parsley so I replaced them with Havarti and spring onions. And to cut down on oil, I used my air fryer. Worked great and took only 10 minutes to cook! Thank you for this recipe, cheers from Canada!
These were Delicious!! To be honest, it didn’t sound like a recipe I would normally try, but decided to give it a shot since I had ground chicken in my freezer. Really, really good- and very adaptable…I used Gouda instead if cheddar and Cajun seasoning instead of red pepper flakes, since this is what I had on hand. Give these a try!! Thanks for the recipe!
Excellent for a meal. I added some Italian Season to the mixture and also use Aged Asiago instead od Sharp Cheddar and melted some additional Asiago on top of the fritters at the end of cooking. I intend to serve this is as a main appie prior to Christmas dinner.
I made these tonight for dinner and they were addictively good! Phenomenal! My husband said to add them to the Thanksgiving lineup! Lol Our children all enjoyed them too from the 6 year old down to the 1 year old twins. I don't generally buy ground chicken so I just threw a couple sliced chicken breasts into the Blendtec. I never once thought of making my own ground chicken. Your post had me remembering my grandma grinding her own meats using a metal contraption with a crank handle that is long gone. XOXO
My mom had used one of those grinders years ago, and it's still at the homestead. I have a newer version grinder that I got with my kitchen aid mixer, but the old fashion one does the same job, and works just as well.
I saw this on your site a few months ago…I loved it, and now use it for chicken patties! I already had a patty recipe, from someone on instagram…it was good, with a pork rind crust, but this is better, so I removed the other one from my recipe file. I use boneless, skinless breasts that I pulse in the processor. Each patty is 1/2 cup of chicken mixture. I eat it on a LC bun w/ mayo, lettuce, & a slice of cheese! Stellar recipe…thank you!

Oh, for sure making these! If my hands get too cold mixing, I find my mixer with a dough hook does a good job. I’m already thinking about changing up the cheeses and seasonings for different flavors. Yum!
I make something very similar, I like to make them a little bigger & stuff a chunk of feta cheese in the middle, gives a nice burst of flavor. Or I make some keto gravy with the drippings from the pan and let the fritters soak up some of the yummy gravy. Something like a keto country fried chicken dish. Served with some good mashed cauliflower with a little of the gravy, yummish. You will feel like u r cheating big time.
We just made these chicken fritters and they were absolutely DELICIOUS! I hate chicken but these were incredible and we had to make ourselves stop eating them so we’d have some for later. This is the best keto recipe we’ve ever made. We dunked ours in Primal Kitchen buffalo sauce but they didn’t even need it. Your recipes are the best, thank you!

You should be able to freeze these again and just have them ready to fry anytime correct? I want to make this for my kids but i want to do a double or triple batch and freeze since they like nuggets so much.

Golly, that looks so delicious. I'm working if swapping out pork rinds for the almond flour for a nut free option - whether that would be good or not. I might want to blitz in with a food processor but always looking at lowering the carb count where I can.
