​@@digitalbath101OP doesn't know what they're talking about, it's my job and you're correct, however it's much more complicated when it comes to red meat, we typically have to be super extra careful when it comes to something like tartare because minced meat is often a mixture of cuts so will have different amounts of bacteria in them. Basically for white meat make sure it's cooked all the way through in the methods I said previously here, and for red meat it's fine to leave rare or blue provided it's a solid cut of meat, avoid cooking rare burgers as that can release all that bacteria and cause poisoning
