Today I am making the ultimate truffle pizza. Continuing in my pizza series, today I am tackling thin crust pizza. You may think to just stretch your favourite dough out thinly, but to get a really great thin crust pizza, with toppings that cook quickly, a base that is crispy and a nice soft interior, some specific and highly engineered processes need to be followed using specific ingredients.
I've perfected this recipe for you at home, and this recipe is based on a European pizza chain that I used to consult for. A lot of work and scrutiny has gone into achieving this Masterpizza! And yes I do use a real truffle, none of that obnoxious truffle oil!

What is the pan made of? It sounds very light almost like plastic. Nice!

Hmm I can’t remember now, but definitely not plastic. Probably light aluminum. Super thin tin pan is best.

If black truffles are not on your shopping list, see if you can get your hands on Pecorino Al Tartufo....A fabulous pecorino cheese studded with pieces of black and white Italian truffles. Grate it on your finished pizza, thank me later.

Hi Master Chef, I was watching your video, very interesting, I want to practice it, I have a question, here is the instant yeast, it is very reactive, with 5 gr the dough is very sticky, any recommendation?

Hmm interesting. The yeast won't make it sticky, it'll be the hydration or the four type maybe. A weaker flour would do this. Make sure you have enough structure built. Perform a few more slap and folds if that's practical. Work with floured hands and board. If that all doesn't work, maybe increase your flour content to suit what you have available.

Sounds awesome… though the egg might need some fiddling with timings, you’ll need to play with that a bit maybe? Give it a try!
