So, there isn't a perfect number answer to this question, which is why I didn't address it in the video. I might make a video on this topic specifically but the percentage where honey will ferment is dependent upon how many yeast spores are in the honey. So, without having that knowledge, I try to keep all of the honey that goes into my buckets below 18%. The vast majority is well lower than that, so it yields me something in the 16 - 17% range and I feel good about that. If I saw some 19% buckets I'd work at dehydrating them to 17%.
Great info as always! With as much honey as you put up I can't see a couple of higher % messing up your batch. I only pulled 34# this year and it's already gone. You never know how many friends you have until your giving honey away.....kinda like hitting the mega millions in a way🤔🤔😉🤣🏴☠️🏴☠️
Yeah, I know all about the gifts to friends. You'll get to a point where you have so much honey that it's just awesome, you can gift everyone honey for xmas and their birthdays. I worry about the percentages of each frame basically because we're storing it in buckets, rather than barrels, but yeah, I worry about that stuff too much at this point.
