Folks like Stephen have taken my cooking to unheard of heights. I had always been a "good cook", being the chief cook in my family after mom went back to work and making all the good stuff she taught me. I used to watch PBS and their cooks with my mom in the decade before she passed. My first cookbook that I bought for ME was from one of those PBS cooks. And now, Stephen and others have shown me not only how to make super recipes, but how to make my OWN recipes. Even now, with bariatric surgery and needing to plan several super small meals a day, Stephen's tag line reads like Truth. Go Feed Yourself. Because that means you're not just shoving some random stuff in your mouth. You're feeding your SOUL when you make the kitchen your own. Congrats on one million subscribers. Here's to the next 10 million.
A super underrated thing you do that I love is that when you cut veggies or anything you dont just do it super fast, you obviously can but that super small attention to being able to see your knife movement slower is super nice to be able to learn and see how the knife should flow.
Glad to be along for the ride. Side note/cool thing is, I work with a developmentally disabled adult, and he loves watching your show with me. We haven't tried every recipe together, but we've tried several. It's always a joy watching together, and then making the food together solidifies the awesomeness. He really loves the video where you're working with your brother doing the "Grandma's Sunday Dinner" thing.. anyway, best of luck, may the numbers multiply further from here!

I didn't join you five years ago but I have taken up making the four classic Roman pasta dishes a lot more and with your help I ended up with a killer Prime Rib roast which found its way into a couple of awesome grilled cheese sandwiches. You, your recipes and your show have become talking points in my home and I appreciate it.
MAN ! Such QUALITY instructions! you explain prep technique, not just listing off ingredients, you explain it for beginners yet show how is can be done advanced! One note, small thing, really. Depending on how you prep your garlic, it will have different cook times. People never seem to notice this and it can really mess with a dish! If someone watching this decided to cute their garlic small, it'd be burned and gone when the mean finished. Small thing I know, but many people have one way they prep garlic and they will always use that method
This is essentially Lentils with Spaetzle, the national dish of the Southern-German region of Baden-Wuerttemberg, with an Italian touch (White wine, parmegiano, tomato, different pasta). Well, we're only separated by the alps, so makes sense that the cuisines are similar. Thanks for this version!
Fine, the first thing i tought it's not very italian but that kind of dishes are very common here in Argentina. I supposed that it was like a traditional spanish dish with the pasta, cos pasta is cheap, so it's possible to mask the need of meet...

It used to be a poor man's dish here in Germany, decent amount of protein and lots of carbs so you could work hard, especially in farming. Also, the soil is very rocky and not very rich, so lentils were the best use for it. Nowadays it's extremely popular

So I have to say I made this tonight and wow, what a flavor bomb! I used a 50/50 mix of red and green lentils, and a nice thick cut bacon since I didn't have pancetta. Thank you for the great food!

Stephen, this came out fantastic. In fact, this may bump pasta e fagioli from my #1 soup position--not an easy feat! The flavor was deep and multi-dimensional and the instructions were fool-proof. I think this is like the 15th of your recipes that I've made so far, and they've all been amazing. My grandmothers were from Italy, so I am ridiculously fussy about Italian food.
