Mortars always fire at the deepest part within range. Placement is key here. Getting anti-creeper from mines would help mop up the small amounts that Mortars ignore.

I do like these more special maps, where they kind of teach you to not just overly rely on cannons, but still give you a way to get some. Also just to remind us about the rest of the arsenal of creeper world.

If you are ever struggling against a creeper threat at the end of a map, a proven strategy is to zoom out, select the whole map, and click. Glorious chaos.

Oh, I remember how I did that map for the Creeper side, literally used a heavy dosage of eggs from the gen generator to make floods of creep.
