At Café Lota, Head Chef Udit Maheshwari is on a mission to introduce diners to regional Indian cuisine they may have never sampled before. The outdoor café at the National Crafts Museum in New Delhi specializes in lesser-known dishes, like chingri kamranga khatta (prawn curry with star fruit), a guava vegetable dish, and a curry with roasted papadum. With the café, Chef Maheshwari hopes to showcase the depth, variety and complexity of overlooked Indian dishes.

Krishna anil kumar I actually grew up watching Indian movies and their news in America. I liked the older Bollywood, when Kareena and other actresses and actors more active in films. All their romance movies are sooo good and tear jerker too. Hehe 🙃

This video just showed up in my suggestions, but I’ve actually been to this cafe, around 3 years ago, I don’t recall what I ate but I remember it was one of the best meals I’ve eaten. It was so surreal watching this video and gradually realising I’ve been there.

As someone who used to watch Simson and big bang theory ...indians English accent are nothing like it I've seen many indian vlogs ... although they pronounce some words slightly different to natives but still their accent is very exotic and sound nice After listening to many native indians speak English it almost seems like many indian actors in Hollywood try to fake their accent to resemble the stereotypical Indian accent ...SMH

I was lucky to do a seven-week project in Delhi last year where Café Lota catered our lunches and afternoon teatime snacks every single day. Seven weeks of absolutely stunning food. I’m Indian but I hadn’t eaten most of the dishes they cooked for us. It was an amazing and delicious education! Thank you, Chef!

@@AshutoshJenaKingJena coconut oil is used only in Kerala, Karnataka has different cuisine, TN and Andhra have different cuisine. Andhra and Karnataka have very good non veg platters, Biryani's. North India eats only roti curry, only Punjabi cuisine is great.

Indeed Indian food is far more than Dal Makhni & Butter Chicken. I am from bengal but staying in Delhi for past 6 years. I am delighted a Food place such as this exists. Truly, food defines a culture in the best way possible, this video is a small representation of that. Will definitely visit once the Pandemic gets better.

You can create 'authentic' Indian restaurants, but unless you create a niche for yourself, it's hard to make money. Moreover, the Indian cusine is so diverse, every region's cuisine can have it's own restaurant. And not all vegetables are easily available outside India.

I'm vegetarian and I've eaten here a couple of times. This place is brilliant. They do an interesting take on some familiar dishes and flavours, while respecting the traditional cuisine. The food tastes familiar, and novel and exciting at the same time.

I'm British who grew up in Delhi. Since I left the country, I have spent the past 50 years searching for the flavours of my childhood, in vain. All the food I can find from the sub-continent is heavily influenced by Bangladeshi cooks and it's just not the same, nor so tasty. I've had to teach myself to make the dishes.

I'm a Bengali who moved to the UK a few years ago from Calcutta. My husband, who is British, refuses to eat from curry houses and has taught himself how to cook authentic Bengali and other Indian food. I once tried food from a curry house and promised myself never to buy again.

@@pushkar000 Considering the number of genres of Indian food, the number of dishes in every genre, the variety of spices in the country, their uses in various kinds of cooking, the subtle differences in the use in the same dish but from a different geography and the complexity of actual Indian recipes, it's best just to say spices. I am no expert, not even a cook with some skill but I routinely buy up to fifty different kinds of spices for use in my home kitchen. Each spice is used alone or in combination in atleast five different ways. Just an example, a common spice combination called Garam masala can be Bengali, Punjabi, Gujarati or Rajasthani, each with different ingredients and uses.

finally someone representing the original Indian cuisine beyond just biryani and ckn tikka masala ..... feeling proud as an Odia to see that they serve Odia food which is hardly talked about and is underrated like the northeast cuisine .... from what i have tried till now i think that Odia cuisine needs the least amount of oil/ghee and spices ... although we do use spices but in small quantity.... opinions may differ ...

@@RealmAfterDusk it's not about spicyness, if that was the case every dish would have the same hottest chili, it's about the flavour profiles that the different spices/masala contribute, you need to be having the apt masala and know how to use them which is seldom used in most European countries so it's tough to replicate the flavours which is why they taste different than the authentic recipe

I'm happy about this stall because many people who the first thing that comes to their mind when "Indian food" is said is naan ,chicken Tikka masala and other well know dishes. This is just skimming the top of Indian cuisine. Many people forget about Gujrati food ,Maharashtra food even some Punjabi foods. Great idea on this restaurant.
