Here's the thing about Filipino food culture. We emphasize home cooking, more than anything else. While the rest of Asia has a strong street food environment, in the Philippines, street food is just to tide you over until you get home. Almost every expat here that hates Filipino food says the same thing: "The food is terrible, but my Filipino wife is a great cook", you will hear variations of this all through out. The "Carinderia" culture was never meant to produce "good" food (though some do), it has always been about producing cheap base dishes and you as the consumer will make palatable with condiments. This is why the Philippines has dozens of condiments available all the time. Another issue is the anti-Filipino sentiment in South East Asia. Practically every SEA country (except Vietnam and Indonesia) has a negative perception of the Philippines, and rejects cuisine from the country. The country has always been hated due to it's multicultural roots, in a region that likes to emphasize on the purity of their culture. The Philippines food has roots in Spanish, Indian, and Chinese cooking, with a base of Malay cooking. The Philippines produced some of the very fist fusion dishes in the world. But we still have a long way to go. Until the government actually start implementing standards for carinderias, the impression of Filipino food would not change. Street food is the door to the cuisine for every country, and this is an area where the country fails.

Well, I do not want Filipino cuisine to be commercialized like what they do in the US, UK, Japan, China, Vietnam, Thailand just to get the validation they need. I like the idea of evolution but the point of promoting Filipino culture through the food is pointless through infusion because you get the idea that people will hate the cuisine for not having the basic "standard" (discrimination) they are looking for a food. Filipino food (and the food palette) is supposedly: 1.) An acquired taste not cultured to sooth anybody's taste buds. 2.) Not fused/infused with other pointless variation/ingredients. In the first place, the Filipino cuisine is already a fusion. 3.) An experience and, basically, not to satisfy anyone's food preference. If you like it, you like it. That's it. 4.) A historical culture that Filipinos have inherited through traditions. Certain Filipino dishes are not designed to be eaten every f#@?!ing day.

We have different types of taste in Philippines... As a Filipino citizen I experienced traveling to the northern and southern part of the country and was able to taste the dishes... I'm from Luzon Island in tarlac province. Capampangan or kapampangan foods and desserts are really the best!

This video is so serene, classy, informative, and appetizing. But, as a Filipina, all I could think about while seeing you eat that delicious food was, Where is the rice?!?! Hmm I was watching the chef and noticed he looks like my dad and one of his brothers when they were younger. Then, I saw Chef has the same last name as my dad, del Rosario. My son is also a cook and aspiring chef. I’d love to take him to these restaurants some day. Merci beaucoup for this video!

My father is from Pampanga, and my mom a Visayan Chinese descent. I grew up having different types of local foods at home which I think they are all the best. Filipino food is as good as any. Like all Canadian cities, Toronto is multi-cultural and I tried a lot of cuisines from Greek, Mexican, Thai, etc. The problem is Filipino restaurants don't care much about presentation compared to Thai and Japanese, etc. I love taro leaves cooked in coconut milk but it looks like cow patty on top of rice the way it is served. Sometimes they even serve soup in styro foam cups.

Because you're probably not eating in a proper restaurant but in a turo-turo, opened not by proper cooks or chefs with restaurant experience but by immigrants who are usually home cooks turned eatery operators. This isn't the case in the Philippines, even cheap eateries don't use styrofoam cups here, they use actual bowls.

I had the privilege of having a short yet memorable interaction with Chef Sau during the 30th SEA Games in Clark, Pampanga in 2019. As a volunteer, we only had certain times in a day to go to the mess hall inside the Athletes Village to eat. Unlike the athletes' buffet (which is exclusive to them and replenished with food 24/7), the volunteers had to manage with whatever was left on our own buffet. At that time, probably around late in the afternoon, the buffet was yet to be replenished, so I had to satisfy myself with some sandwiches (which were the only ones available at that time). Chef Sau came out from the kitchen, greeted the volunteers who were at the buffet, and he even told me to wait for the tocino to be cooked. What a kind-hearted man, he is! Looking at his SEA Games apron that he wore in this video, I cannot help but be reminded of his warm hospitality and generosity despite the hustle and bustle of the Games. Mabuhay ka, Chef Sau! Ipinagmamalaki ka ng lahing Pilipino! God bless you even more, in Jesus' name! 👨🏻‍🍳🤗🙏🏻💖🇵🇭
