Alabama White Sauce Recipe:
2 cups Dukes mayonnaise
1/3 cup apple cider vinegar
1 tbsp lemon juice
1 tbsp Worcestershire sauce
2 tsp black pepper finely ground
2 tsp fresh or prepared horseradish
2 tsp hot sauce of choice
2 tsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
Pinch of salt about 1/2 tsp
Spice Rub:
1/2 cup brown sugar
1/2 cup white sugar
6 tbsp paprika
2 tsp ground ginger
2 tbsp onion powder
1 tbsp garlic powder
1 1/2 tbsp kosher salt (I used rosemary salt)
1 tbsp chipotle powder
1 tbsp ground mustard
1 tbsp pepper

As a born and raised Yankee, I had shrimp & grits for the first time years ago at a restaurant a Georgian buddy took me to down in Pensacola, FL. It was mind-blowingly good. I've since ordered it at a few restaurants across the South and have been let down every time. They ranged from mediocre to bland and bad. My wife has seen me disappointed by all those other restaurants and found a pretty damned good recipe. It's not quite as good as the one from that first restaurant, but better than I've had from any other place since. It's one of those dishes I get genuinely excited for on the rare occasions she decides to make it.

Smoked pulled pork barbecue as we essentially know it today was invented on the island of Hispaniola well before South Carolina existed, and I say that as a North Carolinian.

The white bbq sause is insanely good. Supposedly, the main guy that popularized this had buckets of the sauce and would "baptize" 1/2 chickens in the buckets. 😂

North Carolina here. The most obvious pick is barbecue, but since you've done plenty of that, another ubiquitous food to the coastal region, and VERY unique, is the "all the way" shrimp burger. A burger bun piled high with fried shrimp, hot sauce, and in NC "all the way" means with mustard, onions, coleslaw, and chili. Very unique and so good. 😊

Lifting the skin away from the bird and either stuffing with aromatics or more seasoning really is a great way to produce some badass skin and even deeper flavor development. Great vid as always

I applied Spatchcocking a chicken to my smoker decades ago. It is the best way to smoke chicken. It is moist, smokie and if you use a good rub with a good sauce it is delectable.

Love it. I'd like to add another tip. Pop the thigh bone hip(?) connection. It's looks and feels like a little "T". Popping that connective tissue helps aid thorough cooking.

SC here and I do declare, if you do shrimp and grits. I'll .... I get it. It's easy. It's classic. We actually don't have much going on for our state, LOL. One tip from my ole retired SC dad to you: Use a crockpot, throw in the peanuts and water, and a packet of "Crab Boil" - best boiled peanuts you'll ever eat, homemade in a day.

Lifelong Georgian here! I feel like chicken and waffles would be a good entry for us. Or maybe a fried chicken sandwich, like a higher brow chick fil a sandwich. I know fried chicken is fitting for a lot of south eastern states, but those two feel a bit more Georgian to me
