This is how I prep my fish for the smoker. This mullet was caught up in the far north region of the north island of Aotearoa/New Zealand @ a place called Kaimaumau. What a beautiful fish it was too. This is by no means method that you have to use when prepping your fish this is just how I do it. And to be honest I'm adjusting it almost everytime I do one. I suppose this is just a basic way of doing it. So I hope you enjoy whanau.
