It's a bit confusing to say how many croissants are made per hour because the demand for croissants is only in the morning hours, and it doesn't matter how many are made in the afternoon because they won't be sold. Therefore, it is natural to count them per day. Unless you for some reason do appreciate croissants that aren't fresh.
