The desert is called Brazo de Mercedez. And yes it is marshmallow-like and merengue-like because the base ingredient is white egg. Actually, even the yellow custard part is also made out of egg.

The 1st dessert was Brazo de Mercedes made with eggs. The yolk is separated from the white. Eggs are beaten with sugar until fluffy. Then the yolk is cooked with milk. Then the white is baked like a meringue then folded with the cooked yolk as the filling...Glad you enjoyed it!!!

The one Harry called cello is actually a classic double-bass/contro-bass = the origin of bass guitar before its electrified, but still some classical/jazz bands prefer it for it's unique sounds

What I love about restaurants in Intramuros (walled city) is the old Spanish ambiance and the authentic Spanish cuisines. It takes you back to the Spanish times short of wearing the traditional clothes during that period.

The foamy dessert you enjoyed is called Brazo de Mercedes, it originated in Spain, and dates back in the mid 1800's. Back then it was labor intensive to make because whipping the egg whites was done by a fork, and it was baked in a stone oven. At present day, Brazo de Mercedes can be bought at known Filipino bakeries such as Goldilocks, and also at Red Ribbon.
