A recipe with good pork and very easy to prepare!
Ingredients
1/2 kilo of pork loin, in pieces (you can also use bacon or the cut of your preference)
1 chopped onion
1 tablespoon garlic paste
1/2 cup of ají amarillo paste
1 cup shelled peas
1 cup of shelled corn
1/2 red bell pepper chopped
3 1/2 water
3/4 kilo of rice
Salt and pepper
Oil
6 island bananas, halved lengthwise
Creole sauce
Preparation
Season the pork pieces with salt and pepper. Heat two tablespoons of oil in a saucepan over high heat and sear the pork on all sides. Remove.
In the same pot, fry the onion, garlic and ground chili over medium heat for five minutes. Add the peas, corn and bell pepper. Return the pork and pour in three and a half cups of water. Season with salt and pepper and cook for 10 minutes.
Add the rice and mix. Bring to a boil and reduce the liquid. Then cover and cook over low heat for 20 minutes or until the rice is done.
Meanwhile, fry the plantains and reserve.
Serve the rice with pork. Accompany with fried plantains and criolla sauce.
