I would oil tortillas first. Toast them up in the oven without anything inside until crispy Put filling in cheese on top. Put in the oven long enough to melt cheese. Take out of oven. That way they'll stay crispy.

In AZ we can find corn tortillas in 3.5, 4, 5, 6, & 8 inch sizes so we can buy a size that fits our muffin pan rather than cutting the tortilla to fit. Other garnishes: green onions, black olives, lettuce, tomato.
This recipie is so much better than a certain fast food restaurant. You could cook the hamburger a day ahead or earlier in the day. Thank you for posting.
Yummy that looks very delicious i will definitely make this for dinner sometime. I would put shredded lettuce and diced tomatoes on top when i take them out of the oven.

This was awesome, I’ve made them before but appreciate how you added the green chilis. 😋 I usually only add them to my Chicken Enchiladas, but will definitely try this with ground beef/Turkey next time 👩🏾🍳
Made these with cooked shredded chicken with a good amount of cumin. Also used green enchilada sauce. They are in the oven as we speak. The family are drooling. Cant wait to taste.

I made these but I forgot to pick up the Enchilada Sauce, I had some kind of green salsa that I put on them with the cheese, then it looked like I didn't put enough meat mixture in them so I added more, they still turned out tasty, topped them with onions and jalapeños and sour cream. Delicious!
I came for the comments! Wanted to see what some of y’all think, because what I thought, I’m keeping to myself! Momma said, if you can’t say something nice, don’t say sh**! 🤫🤐 Maybe try adding beans/refried beans, dip the tortillas in the enchilada sauce, brush the tortillas with some olive oil, add rice to the meat w/sauce to keep things moist! So many ways you can tweak this. 👍🏽
So.. I made this exactly like she did and it wasn’t a hit. Nobody finished theirs all, me neither. Top was too hard and bottom was soggy, the flavor was not bussin. 🤷🏽♀️

Some people do not slave on the stove at all. This is something easy for the kids but my husband know I need to put more love into it. But great job simple and easy meal
At Christmas I make flat enchiladas in a glass pie dish and layer with sauce on the bottom, then tortilla, filling, covered with tortilla dipped in sauce, then filling and finally another dipped tortilla with grated cheese and olives. Like lasagne in preparation.
