Surprised it took me this long to make one of these for king boletes, but here we are. Welcome back to Edible or Not!
Today we're talking about the Rocky Mountain King Bolete, Boletus rubriceps. I tend to call these porcini, but they also go by many other names! They have:
✅ Greasy, red or brick cap.
✅ White tubes that mature to yellow then olive.
✅ Stout white to pinkish stem with reticulation.
✅ The flesh doesn't stain.
These lovely mushrooms can be mycorrhizal with spruce, fir, and occasionally pine, but they seem to prefer spruce. They can be found during the summer mushroom season above 8,000ft in the southern Rocky Mountains.
Rocky Mountain king boletes are a choice edible mushroom. The small fist to softball sized ones are the best, but non-buggy large ones are good too. They can be dried and make great mushroom powder. They can also be frozen!
