Chinese Lanzhou beef noodle/ramen recipe:
Soup need:
beef 1LB
some beef bone,
half chicken,
some ginger+salt,
ingredient bag(cumin+star anise+fennel+Sichuan pepper+ginger)
cook for 3 hrs with low heat(1st time)
ground Sichuan pepper,
crystal sugar,:
salt
chicken essence(chicken flavor mix)
cook the meat above for another 2 hrs(2nd time)
noodle/ramen need:
bread flour 500g,
salt 8g,
water 300g
baking powder 25g(optional)
traditional chili oil need:
heat up Sicuan pepper, star anise, bayleaf, cinnamon, radish, green onion, parsley in the hot oil with low heat until the green onion leaf is yellow.
drain the oil and put the hot oil in the chili powder and sesame bowl.
