The only time I use Spot mode is when I'm shooting a subject with stage lighting on Nikon cameras; otherwise, matrix mode results in blown out subjects. This is where there are pools of stage lighting or spotlights on the performer. I also occasionally use it in macro shooting where I need to exclude other colors or intensities of light on a macro subject. Otherwise, you're on point that matrix is the safest approach for general subjects.

so, spot meter for the tone you want in the middle of the exposure, or spot meter the highlight to make sure you don't blow it out ...recompose and BAM! spot metering is the most reliable way to go

In my opinion matrix or evaluative metering is the best mode in 90 or 95% of the cases, definitely outdoors. I only use spotmetering at concerts or weddings, when the background is dark but the face of the singer or bride and groom are brightly lit.
