In this video, I show you how to make an incredible roasted tomato soup!
INGREDIENTS:
(Makes 2 bowls)
Tomatoes (1/2 kg)
Onions (1)
Garlic (1 bulb)
Chilies (3)
Olive Oil (1 tbsp)
Salt (to taste)
Chicken or Vegetable Stock (1.5 cups)
Cream (3 tbsp)
Sugar (1/2 tbsp)
DIRECTIONS:
1) Slice and cut all your vegetables and place on a well oiled pan.
2) Drizzle olive oil over the top, add a pinch of salt and roast in a preheated oven at 220c for around 15-20 minutes or until the vegetables and charred and softened.
3) Add your veggies to a blender and make sure to scrape your pan with some boiling water to release all the liquid present and add to the blender.
4) Add your stock to the blender and blend together until nice and smooth.
5) You can strain this mixture if required and season to taste with salt, pepper, and sugar.
6) Serve hot and enjoy!
