In this video, I show you how to make the most incredible fries in the world!
INGREDIENTS:
Potatoes (1/2 kg)
Water (for boiling)
Oil (for frying)
Salt (to taste)
DIRECTIONS:
1. Clean your potatoes thoroughly and skin them. Cut them into the rectangular shape of your choice. Try and make them all the same size.
2. Fill a bowl with ice-cold water and rinse your cut potatoes in it for a few minutes until the water turns cloudy. Drain the water, add your potatoes to a pot, fill it with water, and place it on a stove.
3. Bring the water up to a boil on high heat, then reduce to medium and boil your potatoes for around 7 minutes or until slightly softened.
4. Remove your potatoes onto some paper towels and pat dry. Place in a fridge for 3 hours or a freezer for 1 hour. If placing in the freezer, use baking paper as a base so the potatoes don't stick to the plate or tray.
5. Bring your oil up to temperature. If you're using a thermometer, heat your cold oil until it reads 130 c and then reduce to medium. If you're doing it manually, then heat the oil on high for exactly 6 minutes and 20 seconds, then reduce the heat to medium and add your boiled potatoes.
6. Cook for around 6-7 minutes. If your fries start to brown, then reduce the heat your oil is too hot.
7. Remove the fries, pat them dry, and place them in the freezer for anywhere from 3 hours to a week.
8. Heat your oil to 150 c with a thermometer or on high heat for exactly 7 minutes if checking manually, and add your frozen fries.
9. Cook for around 7 minutes or until they turn a light golden brown and are super crispy.
10. Remove from oil into a bowl, sprinkle with salt, and toss gently to coat evenly.
11. Serve immediately with your favorite sauce.
