It's not my defense, so can't speak too much about it. If you're looking for general builds, you could do Vigor > Liu Mei > Sylvia for turn order.

Do you specifically not hit some defences to not show your guild's counters to defences that you guys run?

No, just hit whatever is available. If there's a counter I'm hiding until tourney I might use something else to hit the defense, though it doesn't happen often.
