OLD SCHOOL HOT WATER CORNBREAD
This is something I grew up eating as a small town country boy
It's so easy and cheap to make
You can eat it with greens or butter and syrup
1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon shortening
3/4 cup boiling water
Directions
In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
Pour oil or bacon fat to a depth of 1 in in cast iron skillet
Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown( I DONT LIKE MINE THAT BROWN BECAUSE I EAT MINE WITH GREENS), about 5 minutes. Drain on paper towels. Eat with greens or syrup and butter
this recipe will make about 8 cakes

We had this growing up, but no sugar, just salt and pepper! I still make it. Sometimes I fancy it up with red pepper flakes, garlic and onion powder. Butter on top of that hot water cornbread! Cabbage or Mustard, Spinach & Collard mix. Sliced garden onion and tomatoes, glory!!

Good morning Chef Jeffrey! Missing my mom this morning. I never got the recipe from her for hot water cornbread and here you are preparing it this morning. This was the way her family made it in North Carolina and that flavor was out of this world. A little fried fish, greens and pot liquor. You always hit it out of the park. I love you say, "grew up poor. .." photos of the orchard have my mom as a child playing with no shirt, I was born into a house that didn't have floors -- just dirt. We were poor. My grandma, my aunt's, my mom... They all made this.

I grew up on hot water cornbread because my Mom makes the best! It’s one of her signature recipes. I’m gonna share this video with her. And you’re right, Chef, it goes really well with some good ol’ soul food cabbage! It goes good with black eyed peas and greens, too.

Now this is something completely new to me. Always enjoy learning from you. In my family if we had leftover polenta (yellow firm grits for you in the South) we'd slice it and fry it for breakfast and eat it with sorghum or white Karo syrup. I'm thinking this would be real similar. You keep cane syrup on the stove top to keep it liquid.

OMG! My late father would make these every Saturday morning for breakfast, he would shape them between to tablespoons, so they would be shaped different, we never went hungry, and never knew we were poor. We were a big family. All our friends would come over to eat them, with a bowl of beans. We thought we were eating cowboy food. I still make them when I make Chile. I sometimes put cheese in the center. wow such fond memories. Thanks.

Country food, indeed. Almost like big hush puppies. I'm born and raised in VA. I wasn't brought up on any kind of cooking.... homemade or otherwise but my husband was who is also VA born & raised. We've been together so long I was able to enjoy a lot of years of his mom's and aunt's cooking. His aunt used to make what she called hoe cakes but there was no corn meal in them, she used flour. She might have used self-rising tho. She was one of those country cooks who was taught to measure with her hands starting when she was 7 or 8 yrs old. Her grandmother taught her from her bed. Their grandmother couldn't walk at that point so she started teaching the oldest girl how to cook. That's why I love your channel and to see these old recipes. These old school country recipes are gonna be lost one day. My adults kids like it when I cook them but they aren't interested in learning how to make them themselves. So thank you for keeping these alive for me.

My grandmother, mother and aunts would fix hot water cornbread with fried chicken, fresh fried corn and cabbage with tomato and onions. Love the meal, and I love and miss the ladies ❤😢

My family loves my hot water cornbread. My mother used to eat cane syrup. I believe it was kept on the stove so it would be easier to pour because it’s so thick💜

The syrup stays warm and pours easily and stays liquid when kept on the stove. Keep from solidifying when it is kept on the stove.

Got it! My ex-husband use to make hot water cornbread for our dinner every Sunday. His was to perfection! We always had family and friends over almost every Sunday and everyone loved his hot water bread. I couldn't make them to save my life! That is until I followed your recipe just now. I followed your instructions to the tea and I finally mastered this tree recipe. Good eating there. Mom used to make what she called water gravy from cornmeal and water with a little salt and bacon grease. We eat it over mackeral patties. Delicious 😋

Hi Chef, hope you are well! Just a question: You didn't use the whole 3/4 cup of boiling water listed in the recipe. Do you just use 1/4 cup or 1/2 cup to get that consistency? Sorry to ask but my Mom used to make hot water cornbread and unfortunately I don't remember how much water she used. I'm not the great cook that she was; but I loved this cornbread. Your hot water cornbread looks good and I just want to get it right! Thank you for posting all your delicious recipes and the ingredients. I've used quite a few of your recipes......delicious and easy to follow your instructions!!!

Chef I was 16 before I had this & I thought the lady didn't know how to make cornbread patties because my auntie made them everyday. I never ever liked it just to hard for me but same auntie made greens & cornbread dumplings. Love it ❤. I make these too. Tfs Chef!

Mr. Jeffrey, we called them hoe cakes in my household. They were good with greens, cabbage, or white beans. I grew up on them. My family and I loved them. I still fry cornbread like that sometimes when I don't feel like having to wait on it to bake.

The main purpose for remaining near or on the stove so the syrup is loose and applicable otherwise it is real firm and cannot spread.❤❤😂❤😂❤GOOD
