About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. Thai Kitchen is the antagonist on this channel. I love how she’s so polite and classy in essentially trashing it whenever the opportunity arises. That and chicken breast.

I agree. I tried so many and the Aroy-D is just the best. I always get a few cartons when I’m at my local Asian supermarket.

Me too. If Pailin doesn't show me what and how to do it, I have Cambodian, Vietnamese, Chinese, Filipino,.. I have too many sources to make comparisons from, and if I make an error, the critic across the table is not afraid to inform me. Oh, and Mexican influences. ☝️😋👌 Greg 🇨🇦

I went to the store (in Thailand) to cook my first Thai cuisine which has coconut milk in the recipes. I didn't do my research and was so confused what to get but asked for help to a kind Thai lady and she recommended A-roy D.

You’re absolutely right! I usually look for anything that says coconut cream greater than 60%. The higher the percentage, the higher the fat content. Growing up in Singapore, when we made curries or nasi lemak (coconut rice), we would go to the market and get freshly grated coconut. Then we would go home, put the ground coconut in muslin cloth, pour a little hot water and then squeeze out the coconut milk. We would separate the first batch with the 2nd and 3rd batch as the later ones were more dilute. We would use the thicker one for the rice and some added to the other batches for the curry. Best way to go. But it’s hard to get freshly grated coconut in the US.

Love AROY-D! Unfortunately now a can costs $3.29 Canadian at the grocery store... It's the only thing I use for curry dishes and creamy sauces. Because of dairy allergies, I put it in rich Italian homemade meat sauce and it's a game changer!

@@rubiks6 depending on the size of the pot, I just put enough to slightly change the colour of the sauce. It goes up a notch in flavour where you don't need to add any cheese.

i once found this organic coconut milk can from the supermarket and OMG it was amazing. Usually I don't fall in line with that organic stuff but that coconut milk that I bought had so much fat in it that when I made it into thai red curry it was so creamy and delicious not to mention at that time I still had some leftover homemade red curry paste which made the most amazing red curry.

I'll have to look out for this brand in my pan-Asian supermarket, thanks for the tip! Sometimes when I get groceries delivered i order coconut milk and when the substitute it for low fat I send it straight back! I'd rather cook something else than use low fat!

I used to stick to Chaokoh. My brother recommended me Aroy-D. I haven't used other brands ever since, or fresh coconut milk, for that matter.

There is a very good brand called Coco Lopez . Widely used in the Caribbean cuisine . It is with this brand that the piña colada was originally made . When you go to Guadeloupe or Martinique every single household always have few cans in the kitchen either for a curry or a cocktail . It is very creamy .

Yes, the Aroy-D coconut milk is the best I've found. They make big paper cartons but if you don't use coconut milk often it's better to use the small container. Otherwise you have to use up the leftover coconut milk. I bought a 6-pack of small containers today for $10 at my local Asian market.

Omg I came across coconut powder that mixes with water to either make coconut cream or milk depending on ur water ratio... Game changer!!!

Good to know. I've been using that brand and the carton since I have been watching your videos. And now I always add coconut milk to my rice. I may need to do half broth and half coconut milk to see what flavors I can get from the mix.

Totally agreed. Even the green cans ones I noticed it isn't thick anymore pretty watered down I can barely smell the aroma. But so much better then the cartons and the red cans. I stick with the original can't remmber the color of the label, now that is thick rich in coconut milk the best ones.

Arroy d canned smelled like Tuna! I opened another and same thing.. I tried giving it a chance and put a bit in the dish but it messing up the taste as well.. I had another brand on hand so it worked out that time. I hope the cartons are different. Thanks for the tips !

Hey! Yes we've heard of this happening once in a while, and the consensus so far is that it might have to do with the cans getting overheated during shipping. Re the cartons we haven't run into that so far - but some people ordering them online have reported this (though rarely). Cheers! Adam

My local T&T hasn't been stocking up on the carton Arroy D for a while. And yes, the flavor is completely different, carton Arroy D is better.

When I moved out on my own, I had to experience this for myself. I was always on a budget and I got the cheapest coconut milk and I noticed it didn’t have much flavor and too watery, then I went up the coconut milk ladder and came to a conclusion that the Aroy-D brand is the BEST one and I will spend an extra $2 for it lol

I just accidentally got 'lite' today, and the only ingredient was coconut and water. 16 oz had half calories than a 12 oz can, and cost twice as much. The only difference can be water, so I'm going to return them.

Definitely prefer the carton since the canning process cooks off a lot of the flavor that the carton filling process does not.

I only used 2 brands, KARA or Aroy-D. Others taste like old, musty, coconut husk or stale coconut milk.

Always make sure it's fresh - don't wait too long to use coconut milk! It WILL saponify (turn to soap)!

There is a brand Native Forest with only 2 ingredients (coconut milk and water) which has NO guar gum and tastes amazing. It's organic too. Only problem is it's twice the price of other brands but I think it's worth it.

Thank you for the tips on ingredients. I went out today to my friendly neighborhood Asian store and bought Green mountain flavor sauce that you recommended in a different video. We'll see how that goes. By the way you also said black bean paste but they didn't have that They only had black garlic bean paste. The woman who runs the store, who is Chinese, said that is the basic type. So I bought it. What is your advice on that?

The first time I compared the taste of can or aseptic container the can was so much better the other tasted terrible.Perhaps the can had more fat ! Thank you for the comparison❤❤❤!!!

Yes, Aroy-D is good but the best is Kara, also in cartons.

i always buty Aryoy-D in the carton, but i am leary about why it doesn't separate out, and don't trust that the only ingredient listed is coconut milk...they must be adding something to emulsify it. it's interesting that yours lists polysorbate 60...mine says 100% coconut milk. I wonder if there's a difference for the US market in the product or just what's listed on the label.

I lived in Thailand for 7 years and married to my Thai wife for years. We prefer Island People "Chao Kao". Have used Arroy D Would not touch any other brand,

Interesting that here in the States a serving is 1/2 cup (90g)? on the Aroy-D at 17g fat, or is it.... Not sure why it's in grams and not ml. It also says there is 4.5 servings per 14 fl oz (400ml)can. 🤔 The fat content didn't match when I did some math, and just confused me, then I realized that the 'cup' reference is probably just rounded off from metric. I think the can is actually 13.5 oz and so a serving is probably closer to 1/3 of a cup anyway, and not 1/2. Also on the CDN can a 1/3 cup would actually be 79ml, not 83ml, again probably just rounding error. It's difficult to make a comparison based on the discrepancies, but I have to assume the contents are exactly the same. Any difference between the fat content in the can versus carton could also be just math rounding errors. I need to look for the cartons though. Where I am on east coast the cans are still more common, or the cartons are the larger 1L size.

Canned coconut milk usually has stronger preservatives in it. These preservatives are also the culprit that prevent your coconut milk from breaking when cooked on high heat. So, the technique of breaking the milk to draw out the coconut oil won't work for canned coconut milk.

Sadly, even in N California, I can’t find that brand of coconut milk, especially not in the carton. And buying it online is cost prohibitive. I have a lot of Asian grocery stores in my area, but they seem to be Chinese, Korean or Vietnamese grocery stores. I can’t seem to be able to connect to anyone who’s in charge of purchasing. 😢

Fresh squeezed coconut is the best… and yet, high fat coconut milk makes me have a heart burn so I use organic coconut milk.
