Does 100% humidity on the dry mode means that the damper of the oven is actually closed and the opposite , 0% humidity means that the damper is oven ?

Im having problems with smoke from oven. Is there anything I can do to stop the smoke down. It sets fire alarm system to go off.

Dear Karla Using a dripping pan to collect juices and fat dripping from the product can reduce the smoke production. If the unit gets dirty a short interim, cleaning will help to get rid of excessive fat, which will reduce the smoke, also during the day. Another possibility it to check the hood system, if the hood isn’t extracting enough smoke, the UltraVent Plus might be the right solution for you. Hello, kindly advise me what temperature and humidity to use in doing my doing my food as my food is cooked then freezed to make it rigid then i take it out of freezer when client comes then quickly dip it in a liquid stuff like pancake liquid then into oven so it so it would be defrosted and inside becomes hot and outside layer should be crisp and all that must so quick.

Hi chef good day to you. We have a technical problem with rational combi oven SCC 102E Pcb shows clean jet care, when pressed display not functioning, even later touch pad is not working, pcb totally hanged, if closed power from breaker,and turned on after 10sec, then display opens, after selecting dry heat finally shows 160 degree Celsius, to select temperature 🌡this sign not functioning,but can select from timer sign and for time setting, need to select drip steam sign. Kindly advise me how to reset. Thank you.

Hi, select in the Egg Process > Boiled Eggs > Select the Caliber of eggs and degree like soft or hard. The recommendation is to use the recommended settings and it should take appx. Between 8 and 9 min. Thanks, The RATIONAL Social Media Team

Dear Jungledon99, For your sourdough boules or Batardes: You can use our Pizza and Grill accessory and preheat it to give it like a rustic bread finish. Preheat on manual settings Dry Heat 245°C/473°F 10% with the accessories inside the SelfCookingCenter. Load your bread on the preheated accessory, inject steam 4-5 times, bake for 10 min and then reduce the temperature to 185°C / 365°F and bake it further for 25-35 minutes, until your desired browning is achieved. Check the bread bottom with tapping with your hand, it should sound hollow. Regards, the RATIONAL Team

Hi, even though RATIONAL Cooking sysytems ensures even baking results, stirring of GRANOLA is recommended but you would not be stirring it as frequently as in other conventional equipments. RATIONAL Team

Hi Shane 🙋‍♀️ Please use the pre set function in your SelfCookingCenter for meringues in Baking. ➡️Use browning 2 or 3 and appx. 12-15 minutes.

Hi Werkman 👋 Thanks for your request. Shutting down the fan completely during a cooking process is not possible as the fan transfers the heat energy in the cooking cabinet. If you produce sensitive products, our recommendation is to use the setting fan speed 1. This fan speed is very gentle and specially developed for sensitive products like macaroons etc.

Hey we make vegan cookies so no dairy but my cookies come out moist on the inside and a light crisp on the outside @ 350 degrees , I’m about to use one of these and what temperature would anyone recommend out there with experience with this oven and vegan cookies cuz I can’t afford to burn them 💵 any feed back is greatly appreciated 🙏🏿

We recommend you to cook your hot wings and fill the finished product into the paper boats. The process for the Hot Wings with your SelfCookingCenter: "Poultry" - "Pan fry" - "Thick" - "Coloration" 3 - 72°C or 165F, preferably roasting and baking tray or granite enameled container. 💡 The problem with frozen products is that liquid accumulates during cooking, softening the paper boats. Another problem is the heat or the material of the paper boats.
