I tried many recipes. This is the best. Some contain cream, but the mascarpone is already fat and milky on its own. The whipping of the eggs definitely does the trick here, meaning it gives the tiramisu some body, some stiffness. Thanks Chef John.

I made this today! It turned out well and so easy to make!. I was making this to pair with spaghetti so I used the simmering water to make the custard! Saved me some time while I waited to the water to boil! Thanks Chef John!

This is my favorite cake. When I was a kid in the 90s and lived in a small town in the 2.5 world country that Israel was in the day, my wish for my Bar Mitzvah at 13 was to have Tiramisu, which I only read about in books. My parents turned to the local...I guess baker because confectioner is too big a word for a cake-maker in a town of 800 people, and asked for it, and he had to drive for hours to the only dairy farm in the country that was producing Mascarpone. To this day, and I've had many Tiramisus since, I hadn't tasted one that compared with that one. Maybe the Mascarpone had gone bad while he delivered it and I should try it with blue cheese, but really, nothing like it.

As always, it looks fantastic, chef. For those who are not comfortable using eggs in the recipe, you can substitute it with whipping cream. Whip the cream to the consistency you'd like the final product to be (stiff or runny). And simply add it to the mascarpone cheese and the rest of the ingredients. I think the alcohol can be omitted. If you like to add a depth of flavor to this simple recipe, add a little bit of honey and use brown sugar along with the white sugar. You can even use some orange juice and zest. It's delicious. :-]
I tried this a couple weeks ago. I did not buy mascarpone cheese as that alone Is over $20.. So outrageous.. I made my own using heavy whipping cream and lemon juice and it turned out AMAZING. Over 6 people tried my cake and couldnt stop eating it! I used this recipe as well as Crouton Crackerjack's and just changed up the measurements a tiny bit to my taste. I added Kaluha and that right there was the key. I've never tasted something so delicious! It was so sweet but also had a kick from the espresso and Kaluha. The dark chocolate and cocoa powder on it really complimented the cake so well! This was my first time and definitely not my last!

I use heavy whipped cream instead of egg whites to make it a sweeter dessert and thicker in general to cut. Both recipes are very good. :) And if you do not have access to lady fingers, butter pound cake pieces are a fantastic alternative.
TheKaffeeKlatsch I haven't had Milanos in a long time, so maybe I'm not remembering them correctly, but do you find that they are too soft for this? The point of using ladyfingers is because they're a dry cookie and will absorb the coffee mixture without becoming too soggy, so I'm thinking Chessman cookies might be better? *EDIT:* _Never mind. Looks like Milanos are indeed a biscuit type cookie. So thanks for the recommendation!_
Living where I live it’s practically impossible to get marsala. As for rum, well, I once asked liquor store owner for some and he replied with “Rum? What the hell is that, I’ve had this store for 15 years and I haven’t sold any, nor has anyone asked for one!”. So I always made this with vodka and it was nice. This time, however, I had some chardonnay so I decided to give it ago. It was a bit dry so I upped the sugar just a little, and boy was it good. I liked the slightly fruity punch so much that I don’t think I’ll go with vodka unless I’m out of all options. And also, aside from doubling my espresso and wine mix, the recipe is incredibly accurate. I always use exactly 10 ladyfingers and get 4 cups of dessert filled to the brim with not a teaspoon of leftover mixture.

I use an electric mixer. super fast and easy. 30 minutes start to finish. I whip the whites first and put them in the fridge. Then I use the same whisk on the yolks. slightly less cleanup. whites works a lot better than whipping cream (really light and silky texture). cream cheese makes it like a coffee cheesecake. marscarpone tastes/feels like whipping cream. maybe I'll try half and half.
I don't drink coffee or eat cheese and eggs. Can I use spaghetti and meat balls instead? Cooking is so difficult and I'm so incredibly helpless and silly!

One of my favorite desserts started in a brothel. That's pretty awesome. I've never made it this way. It's quite different from the way I was taught how to make it.
A moka is a good, inexpensive espresso maker. I think I paid 15$ for it and haven't been disappointed with it. Just do yourself a favor and get really good espresso beans. I tried folger's once. My friends didn't speak to me for two weeks. No, regrinding store coffee doesn't work. hehe.
Bob From Accounting : yea. I usually like to snack during the loving, too. But that's usually because the snack is more interesting. Sometimes it's because I get hungry during a long ride.
