Thanks for the instructional video! I’m sharpening a 12” paper cutter blade with stones. I’m not a pro but it’s my paper cutter.

Great job on the jig. Have you tried ceramic files on the burr? They work for me on extra hard, wear resistant steels.

Not on this tool, but yes, I'm a super fan of ceramic hones over steels for kitchen knife maintenance for your exact reason, ceramic is harder than steel so it works on all of them. Good call, appreciate the comment!

If you are still servicing this account, please please consider wearing cut resistant gloves and some type of shoes. Otherwise, quite impressed.

You can't be WRONG if it preforms like the customer says it does. But I can't imagine the manufacturer's angles being WRONG either. They could be doing a sloppier job when they do their work . . . But that difference of 1/2 degree in the bevel angle isn't anything magical or unknown to them. There is a optimum cutting angle for every type of blade. Maintain that same angle, or get close, and there will be success. There is a correct method and an incorrect method. The two methods won't be apparent . . . so everyone thinks they have discovered a secret special sharpening system. There is only one . . . looking at it on a microscopic level.

Matt, Nice work! I think I can speak for everyone here. Thanks for showing up. I also would like to thank your wife and kids for sharing your time with us. Behind a good man is an even better woman helping and supporting him. I'm sure your making a bigger difference in peoples lives then you could imagine. Doing the editing must take more time then just doing a uncut version. It would have been hard to do a video like this without it. The 15 min videos are perfect. FYI Don't drop that blade on you foot. Shoes or no shoes!

I know dude! The bare feet! ahh so unsafe. I just hate wearing shoes! I put a nice padded floor in my shop too. Thanks so much for your kind words and I'll be sure to share that with my wife, she does indeed pull a heavier load on the grind nights, and in general when I spend my evenings in the shop making a little extra dough. Appreciate your awareness to that. And yea, I like the edited videos better too, but they take about 4 times as long, even with the minimal editing that I do. Thanks Tim! You rock!

This skilled blade sharpener definitely knows his trade. I sent him the same blade that I use in my guillotine by mail, and he did an outstanding job. The blade now cuts even better than when I first purchased it brand new. I discovered him on RU-vid when I was desperately seeking out a solution to sharpen my dull blade. As we all know, brand new blades are never sharp enough. After reaching out to him via email and sending my blade, he quickly repaired it and returned it to me within just four days. The edge of the blade is now in SUPER EXCELLENT condition, and I am thoroughly impressed by the professional work that he did. I highly recommend his services to anyone in need of blade sharpening. This was great!!! Searched this because I’m getting paper knife covers getting printed and the printer asked if I can do these blades, I asked to see one and can totally do it. Hoping to pick it up from the printer soon. Thanks for sharing

Matt! I wish I had talked to you before the guillotine cutter I just sharpened. I just sharpened one exactly like that made in CA. That jig is fantastic and I need the instructions. Please post your how-to in the Guild of Professional Sharpeners.

Right on, Doug. Good call. I've always been hesitant to broadcast or promote that I do this because I know it's 'wrong' but yeah man, it's workflow through the shop. I'll put together the details on the jig for the Guild.

I worked at a small print shop for a few years. I operated a machine that would take a blade like that. There are some serious horror stories about accidents with them. To help safely move the blades in and out of the machine and carriers we had a set of handles that screwed into the bolt holes at the top half of the blade. Allowed for a very secure grip. I would suggest at least using a 4” or 6” bolt of proper thread to do the same thing. Might help moving the blade through your jig as well until it gets in the way of your stone stroke. I don't even want to imagine the horror stories with these. That's a great call to thread a bolt in to help control it as I slide it along the jig!

It's impressive how you figure out a way to sharpen this odd stuff. Most would turn it away. Now you've gained experience and a repeat customer. Awesome.

Do you always sharpen knives barefoot? Or is this only something you do with the most challenging and dangerous industrial items? Seriously though, I've watched about 30 of your videos since receiving an Apex last week. Love your videos, and how fast (and clearly) you talk at 2x speed. You are doing great work all around, thanks! I look forward to watching the rest of your videos (that are less applicable to my specific equipment, but I always find useful nuggets of commentary).

Yeah man, when it's warm out I very much like to keep the feet free, but I agree, it's really a poor choice and I should be smarter. Appreciate the reminder on that. I try to do that too in my videos...while the actual work takes some time, to learn it and understand what I'm doing can be done faster. Good luck with your new Apex!

​@@capnmatt41 I wanted to add that I regularly slow the speed down to normal to make sure I am understanding your "actual" speed/rhythm, which is often quite delicate and always deliberate. As a beginner, I need to remember that the sharpening doesn't actually happen best at 2x.

I just came across your channel and noticed you use the same knife sharpener I’m interested in. Only thing is I don’t see the collar comes with the kit. Where did you get the collar from? Thanks for the education. I have some of the pro tips in my notes.😊

Love this stuff! Ixd like to see more about the Sharpener and the stones you have there. Maybe a little about how you would remove the bur on a double edge blade like a knife. I use the Lansky sharpening system on my knives and I just do a series of light strokes on each side to try to prevent the bur but what's the oil coming off the stone as I work down the blade for consistency. Maybe there is a better way...

What is the angle you were using to redo the edge on the blade ?What would be a good angle to begin with anyways? 30 degrees?

Run the flat side with the flat part of the stone to remove burrs
