I use an ulu for almost everything because of hand deformity due to Scleroderma. An ulu is the only cutting tool I can hold in my right hand to cut, chop, slice, etc.. I’m grateful for the ulu knife and also for your video. Thank you..👋

I cook a ton and want to start a cooking show. I use a bunch of knives and among them the Ulu. I love it for vegetables and chopping for stir-fries and salads. They work best with the square wooden dished cutting bowl as you showed. I probably don't get as much use out of it as I should though since when I think about there are so many uses for it. You can easily run amok with it though so I wear chain mail on my left hand when I use it.

Nice job with this one. I always learn something watching you sharpen. Dying (literally, not really) to know more about your dust collection. That shop fox is way bigger than expected. That's good because I wasn't sure it was going to handle 3 Work Sharps. I hope you are liking it.

Yeah man, still working out the details on this dust collection system and I look forward to finally doing a brain dump with you and the rest of the Guild. Regarding the Shop Fox, for long blades, I was thinking I could just slide the others out of the way, but it hasn't been an issue. So far, plenty of room, the issue I'm having is making sure it's all getting into the downdraft effect.

Really enjoyed your video on sharpening an Ulu. My has two and uses them almost daily in the kitchen to cut/chop vegetables and cut meat. She prefers them to regular kitchen knives. BRGS - Louis

Thanks Louis! We use ours as well, mostly for chopping nuts. It doesn't get as much use as our kitchen knives but it doesn't collect dust either.

After sharpening our own Ulu knife my wife started using it for chopped nuts. Great utilization with that rounded out cutting board.

Great video tonight. Happy Thanksgiving. In my experience the mezzaluna is used primarily by inexperienced cooks to chop herbs. It's safer than a chefs knife. Also, cooks with arthritis or stiff wrists grip it in the fist, palm down. The ergonomics allows for less painful cutting or light chopping. They are not for pizza on a stone or pan. The ulu is based on a native Alaskan knife made from slate used for processing aquatic mammals. Keep up the good work.

I learned on a recent trip to Alaska that the ulu is a knife of the Athabasca people and it's considered a woman's knife used primarily for butchering fish. Many tribes had\have a slightly different shape of ulu that is sort a trademark style for their region. I bought one from a guy who makes them out of old saw mill blades with antler or bone handles. Great for rock-chopping herbs and not bad for mincing too, but I'll admit I rarely use mine either.

Thanks for the great content once again, Matt. Sweet setup with the three Work Sharp belt systems. Can’t wait to hear more about those. I am curious about the wire wheel for removing the burr. Does that leave any scratches on the blade? I would guess that the next pass on the WS belts would help. Thanks for bringing us these goods even on a holiday. We are grateful for you and all you share with the sharpening community.

Great call on the wire wheel, Doug. It does leave its mark on the blade. I try to go light and run the wires in the best spot but yes, it should be done with discretion. I appreciate your kind feedback!

My Ulu knife is also a chisel edge while my mezzaluna is a double sided edge. I believe the Ulu (ooloo/uloo/oolou???) must generally be single sided. My Ulu knife came from my mother who lived with the native Americans near selawik providing medical care for a time period. (In case there are variations in blade design and edges depending on source location from Alaska)

Matt - 'nother great video! very insightful. BTW is that why Worksharp Tools is out of stock on some of their equipment??? I agree with Adrian. Herb chopping for sure with the Mezzaluna (half moon) knife. It also serves as a scoop to transfer the herbs into a container once they are fine. I have also use two (2) of them for chopping cooked proteins - think shredded pork, chicken, etc. Ulu - I have used this on larger fish from Hawaii - Opah, Ahi, Mahi and Stateside - Halibut and some Larger King Salmon. I like it for the ability to cut forward and backwards. Cheers!

Great video content. Is the Work Sharp cloth belt the standard one from Work Sharp? I have a terrible time keeping my centered and on the pulleys. Also, they seem to shred (stings come off the sides). Any advice you could provide would be greatly appreciated.

I really liked those cloth belts when I got them to work but for the reasons you mention and 1 more I have since gone to using a leather belt.
