You're such a funny guy!!! you didn't do it properly at all and yet you judge it and give it a definite NO GO!!! you were supposed to prepare it like a mayonnaise, instead you just blended the egg and oil, did not incorporate any air into it. Of course it did not come out the way it should have, because YOU DIDN'T DO IT CORRECTLY, that's why! :D I hope you know how to make mayonnaise now, 5 years later :P
If you were to ever try this again try doing it in a food processor or use an one of those wand blenders. It will be completely different. You didn't get the emulsion going. That's why it didn't work.
This is the same thing that happened when I tried making this exact recipe. I'm glad to know I'm not the only one. I did follow directions exactly. I would love to see someone do it "correctly"
I know miracle whip says they only use the yolk from the egg. But the yolk separation is done at a factory we're a fair amount of white is always mixed into the process. They're beaten egg yolk mixture is way less yellow then you're beaten yolk. Also you add the vinegar and the lemon juice directly to the egg mixture. If you used a stick mixer/blender it would have been 10X thicker. I make it with the whole egg and taste testers cannot pick the right one vs my copycat. Try 3/4 cup oil and add to it if needed
Try an immersion blender! Kraft probably bleaches theirs to get it to look like MW. Not many knockoff recipes seem to work. You usually end up tweeking. The most accurate ones usually use a scale for best accuracy.
This is a legitimate method for making mayo and miracle whip, but he fucked up on the whisking process. If he whisked properly, then it would've actually worked.

I didn't think I liked miracle whip. In fact...I thought I hated it. Then I went on a picnic with a bunch of people and their sandwiches were made with miracle whip...and omg! I LOVED the miracle whip!! haha
When making mayonnaise or whip-creamy like products, it's important to whip/beat really fast. I recommend using a food processer to get that consistent texture.
@LoneIiest to be fair to me, I followed his instructions just like he wrote. Not everyone who buys his book will know what emulsify means or even guess that's what your supposed to do. He never wrote that in his book.

Our Simple Kansas Recipes For: 1) Mom's Potato Salad, Or; 2) Mom's Macaroni Salad, Or; 3) Mom's Quick Balogna Salad Sandwiches. For Balogna Salad Sandwiches, In a mixing bowl, Use one (1) chilled Package of Oscar Mayer Bologna. (Shred by food processor, or old style grinder.) For Potato Salad use 2 to 3 largish, peeled, boiled, drained, and diced, Russet Potatoes. For Macaroni Salad use 2-3 cups of boiled and drained well elbow, or penna pasta. For all of these dishes; the potato salad, the macaroni salad, or the balogna salad, use these below (4) same ingredients: 1 cup of chilled Miracle Whip Salad Dressing. 1 or 2, boiled, and diced egg(s). 3 Tablespoons of French's Mustard, and finally, 3 Tablespoons of Sweet Pickle Relish. Mix all ingredients together for each dish, and refrigerate, covered. Add more of any of the above ingredients to your taste. Enjoy. You may add diced cheese, for color, to the salads, and/or cooked frozen peas, or both. But, (Do Not) add these extras to the balogna salad. Enjoy. caegw and glwj.
It wasn't thick enough because you weren't wishing vigorously enough. :P I'd try using a hand blender or a regular food processor. Good video, nevertheless!! I love your videos. And to the people who don't know what miracle whip tastes like, it's a tad bit sweeter than mayo and has less of an egg-yolk taste. I like it better than mayo, personally. :)
@ChompOnBobo I would have done that, but I followed the recipe and the recipe just said to wisk. So I did. The whole idea of the test was to see if the recipe is any good. I know how to emulsify but they never said to do that so I didn't.
Todd Wilbur's directions were the ones I used. he said whisk for 15 seconds. That's what I did. Had he said use a mixer then I would have done that. You are probably right. That was why it never took on the form it should have. 15 seconds seemed awfully short to me.
Would have to agree. Whisk = No You want to add air into the mixture. It is the same process as turning simple cream into whipped cream. Any hand blender will do
Its because of the lemon juice, you need the acid to break down the yolk first, thats why you put the lemon juice on the vinegar, thats why you failed. If you try it again except put the lemon juice with the vinegar like it says in instructions, It should work
If you didn't like the pre-covid recipe, you will like the post covid recipe even less. Kraft made changes that make it even more of a health concern than it was prior to covid. Just an FYI, I grew up poor and one of the things my mother would do is give us miracle whip sandwiches. Nothing but miracle whip between the bread. I had a hankering for one of those sandwiches a couple weeks ago and when I took a bite, I immediately thought, wait, this doesn't taste right. It's not the same as I remember. So I grabbed the jar and looked at the ingredients and seen high fructose corn syrup in the ingredients and thought, that wasn't in there was it. Eventually I went into my storage and grabbed an empty large jar that I'm keeping in case I need to store doodads and compared the ingredients. My taste buds did not lie to me. The two ingredients were not the same. ok two things. 1. blend it in a blender on medium or best is a hand blender and 2. If you want to find a use for that salad dressing, use it for coating chicken and baking it. There are several recipes to use Mayo or Miracle Whip in baked chicken recipe. Oil is the largest ingredient in them and so either of them make good coatings for chicken you will be baking. A full jar is enough to brush all over 2 whole cut up chicken. Season with All Spice and garlic salt. Bake 375 for 50 min.
The recipe calls for using a whisk to be used like a whisk when making mayonaisse .I would use a large metal bowl and beat it with a whisk silly till my arm fell off .One could take a boat motor or blender and it would be done in under a minute. I might just try using some regular mayonaisse and spike it with some salad dressing and a slight tinge of lemon juice and there is all the ingredients needed as I have alot of left over turkey and no way of getting the kids some miracle whip .
hey jack, next time you might wonna try this recipe with a mixing-machine or something... (dunno the english name for it). Usually the egg-yellow and the oil should become a thick sauce if whipped good. Usually it's too much work to do it by hand... that's maybe why your sauce stayed so loose. best regards!
no. It says egg yolk. Look at my next video and I show you the recipe where it says in the book one egg yolk. I have to redo it with a mixer to see if it comes out better.

Exactly. The reason it's not white, or thick, is because you did not incorporate air. You can't really call this a fail... Anywho, the show is still great. Keep up the good work...but I still want to see Test 3.
I thought the same thing, but his book says one egg yolk. My hand almost fell off after the video was done. I kept whisking that darn thing forever. You just didn't see it all in the video.
jack, i think you should put the egg in a food processor of some sort because you have to handmix like hell for it to become fluffy and white. u should really do a remake of it but use a food processor instead of whisking
The reason it isn't white is because it needs to be whipped more. Whipping introduces air, which diffuses the light and makes it appear whiter. (It is how they get white candy too) Although I'm not sure that helps with the taste much.
If you used a hand blender instead of a whish it would have turned out much better. I make my own mayo in that manner and it is better than store bought.
While its true that it may not have been mixed enough he was supposed to follow the recipe exactly. 15 seconds wouldnt have been enough even if he used a jet turbine to mix the stuff. Also.. I'm a weird person. I like regular mayo and miracle whip just fine.. then again I can also drink coke or pepsi and not care. I dont see a big enough difference between the two to like one and hate the other- but tasting it straight up, any condiment tastes disgusting, so... eh.
there is no way. I have to setup lights and camera, shop for video, film video, tear down equipment, then edit the video. I was sick all week and was up til midnight editing so I would have this ready by today. One a week is very hard to do. Maybe if I get picked up by a tv station then I can do this full time.

Very interesting that you chose something you don't even like and put it to the test....I too can't stand Miracle Whip, so I admire your willingness to experiment in the kitchen and the honest way you present the results. the show isn't about me. it's about choosing products that are well known. Arby's Horsey sauce is good, but not everyone knows it. So I went with national brand names. The next one will be good. I already filmed it. Real food. Yeah!
