Rosie C - Hi Rosie, it doesn’t matter. Any speed will work. If it’s low speed, it may just take a few seconds more. BTW - Do you enjoy making traditional foods? I made mayo with a stick blender the other day and it came out GREAT! The BEST Oil to use is AVOCADO OIL and it is EXTEMPLY Healthy for you!

Recipe please? No way will I use sesame oil... and not really wanting a hint of coconut oil taste either. I too have viewed numerous mayo preps. Let me know if cocunut oil taste was obtrusive please. Mo green

Absolutely I am an avacado lover, I eat them fresh right out of the peel, and the oil is amazing. Not only in flavor (from my point of view) but also in nutrition. I call them "gifts from trees". Try also walnut oil, gives your mayo those omegas and adds a nutty twist to the flavor profile. I have used this in egg salad and deviled eggs too.

@@maureengreen8240 hi Maureen, I bought refined liquid coconut oil from Walmart for this recipe and it does not have a coconut flavor. But that being said, I will never use this combination of oils again because it just tasted weird.

Very true. I saw a basic video before about how to do this, used all olive oil and it was disgusting! I don't recommend it at all.

Really it's about personal tastes, just try to stay away from cotton seed oil, corn oil, etc, stick with pulp oils. Avacado, olive, walnut, coconut, etc. Seed oils will make mayo, but they are highly inflammatory and you don't want to do that to the ones you care about.

I've always used MCT oil or avocado oil or a mixture of both. Both oils can be kind of pricey but neither oil adds any flavor or aftertaste.

Yes! I only use avocado oil. No aftertaste at all. Aldi sells great quality avocado oil for roughly $7-$8

I am sooo picky about oil in homemade mayo! I've made mayo for 15 years. I've tried a few oils and Chosen Foods brand avocado oil is my hands down favorite! Very neutral flavored. So far, I don't like the flavor of other brands. Thank you for another wonderful upload. God bless!

This is like sitting in my Home Ec classes back in the 60's all over again. Just add a sewing section and it will be complete LOL. I love your videos. We are in the process of putting in a new kitchen and I will be able to make so many wonderful things now. We are big on foods with the "mother" and homemade sauces/condiments. I use a combo of 60% extra light olive oil and 40% avocado oil and it seems to taste okay. I will never buy storebought again. Too many chemicals and additives.

I’ve been making my own salad dressing and had been adding mayonnaise, but when I looked at the mayonnaise jar this morning and saw that safflower oil was in there and that it was the first ingredient, I checked to see if you had a homemade mayonnaise recipe and you did. 💕Thank you, again! Hi Mary!!! I am so thankful to God that I clicked on your channel, while I was searching for homemade sauerkraut recipies!! I have made it, but it's still in progress.I don't see any bubbles but the colour has changed and kraut juice is quite thick.I live in Mumbai, India and its a rainy season here. I am praying that it turns out delicious 😋🙂 So today I tried your recipe of Mayonnaise and it turned out soooo delicious!!! This is great. I’ve made homemade mayo so long I can’t stand store bought. I’ve always used whey and lemon juice, and a bit of Dijon mustard. My method is small food processor with drip. I’m definitely trying this method next time. The oils in store bought mayo are so horrible.

Holy cow! I just made mayonnaise!!! I am floored at how easy it was. I ended up using avocado oil because that is what I had on hand, but my daughter tried it and said, "It tastes like GOOD mayonnaise!" Just an FYI- I ended up making 2 batches and then mixing them because the first was too salty. I used sea salt and I am not sure whether or not it was evenly distributed. The second batch, I cut the salt by more than half and then mixed the two. It was perfect! I am so tired of paying $4-6 for a tiny container of Primal mayo and I don't want the soy products. Super easy and tastes great. I dated it, so we will sure to use it up quickly. Thank you Mary for all your encouragement. You have empowered me to bless my family.

I don't like avocado oil or olive oil either for my mayonnaise; I like grapeseed oil. I've never heard of the combo you suggest though, so I'll try that next time. I also found that when I don't have any whey available, sour cream works quite well to help the mayo ferment. I added 2 heaping teaspoons to 1 cup of oil.

What a great recipe and method...! I used to make homemade mayo with a whisk and will never do that again (unless the power is out)! The immersion blender (and your instructions on how to use it are GREAT)...! Some modifications I made: I used 1/3 light olive oil (more neutral flavor); 1/3 grapeseed oil (also neutral); and 1/3 refined coconut oil (as the unrefined tastes like coconut). Rather than 2 large eggs I used 3 yolks (only), because of my background in health and raw diet, where I learned that uncooked egg whites disrupt biotin absorption in the body. The body needs biotin to help convert certain nutrients into energy. It also plays an important role in the health of your hair, skin, and nails. Anyhow it came out GREAT -- except for being way too salty. Either I had a memory burp and put the (pink Himalayan) salt in twice or 1 tsp. was way too much for me. Next time I'll try 1/2 tsp. salt and go from there! The egg whites can be saved to mash in with tofu and a wee bit of turmeric to make a base for another type of "scrambled eggs." CORRECTION RE THE SALT: I used an unfamiliar brand selling the salt for non-food use (to save money) and suspect they cut the Himalayan with sodium chloride! Your recipe is probably PERFECT on the amount of salt -- as long as a person is using a good quality salt like Celtic salt or true Himalayan! Oh, and one other tweak for me is to use at least 1 TBL + 1-2 tsp. of the raw apple cider vinegar. THANKS AGAIN for this great method. I had given up on making my own mayo until now and really, really, really don't want to eat my ex-favorite (Hellmann's) because it is made with GMO soy. GMO really messes me up!

Love your channel Mary! Just made this and it’s too watery!!! I put 2 small eggs, half cup each of olive oil and coconut oil, 1 Tbsp apple cider vinegar and a teaspoon of pink salt and mixed it in my mixer. What am I doing wrong? How do I fix it so it’s not too watery? Thank you😅 Oh never mind-seems my ingredients were too cold. I let it sit for 10 minutes and when I went back to it it was nice and thick😅

I make my mayo with 100% extra virgin olive oil (EVOO) only and the olive flavor is not overpowering. Not all EVOOs are the same. You have to know your EVOOs though. Mary is using a very dark green EVOO in this video, these oils will have a much more pungent olive taste that is not ideal for a mayonnaise as one usually desires a more neutral tasting mayonnaise. Some EVOOs are much lighter color, in some cases more yellowish than greenish. These types of EVOOs will have a much milder taste and will allow you to make a mayo that is more neutral in flavor. You just have to find the right EVOO. To be clear, I'm not talking about refined olive oil here but first cold pressed extra virgin olive oil. The color and flavor of an EVOO will depend on the olive variety used to produce the oil. Some EVOOs from some countries like Spain or Tunisia for instance are ideally suited to prepare a fairly neutral tasting mayo. I buy one such EVOO (Terra Delyssa) produced in Tunisia that is organic, light in color, mild in flavor and not too expensive for an EVOO. Places like Costco and Walmart carry it, at least up here in Canada. When it goes on sale I stock up on it and make my mayo with it. My mayo costs me less than store bought commercial brands that typically make theirs with canola oil; very neutral in flavor but not in the least bit healthy when compared to an EVOO mayo. One last tip, you can also use lemon juice instead of vinegar for a sweet lemony twist, I like it better than vinegar.

Your mayo method is spot on! I used all avocado oil since that is what I had and the qualifying was so quick and easy! I also added the mustard powder and the raw apple cider vinegar to increase refrigerator longevity!

One other thing, you are worried about the eggs and cleanliness. If you have chickens, and they are healthy, the inside of the egg IS STERILE. Unless of course the egg was cracked, then all bets off. One very IMPORTANT thing, eggs have a protective coating on them when they come out of the chicken, when you wash them, it takes that coating off and they can start getting boogies in them. Once you wash an egg, USE IT. If the egg has a bit of poop on it or otherwise, you can also use a very mild bleach water to wash it down with to help sterilize it, especially with a recipe like this that has no other preservatives really and bad bacteria can really cause problems.

In addition to adding the vinegar, which will give a longer shelf life, try storing it in a vacuum sealable container. That will likely add to shelf life, I would think. FYI: Liquified coconut oil does not impart any flavor. I have not made my own mayo in years, but I recall how delicious it was. I don't usually make my own because I don't use enough mayo regularly, so I'd have to throw some out... But making turkey sandwiches this week after Thanksgiving might be a reason to make some now! Recently, I tried one with avocado oil... Wow, that takes getting used to! I will not buy it again, myself. Did not like it on my first turkey sandwich, either.

To be honest. I have tried making mayo with olive oil as test. And the polyphenols in olive oil in mayo makes it extremely unpalatable to me. I try to avoid processed food as much as I can and in particular so called "vegetable" oils. Which in my opinion might as well be bio diesel. I use organic cold pressed rapeseed oil for mayo. I know it's not the healthiest. But it's not even close to being the same as the crap seed oils you get from GMO canola/grape/sesame/peanut/sunflower seeds being processed in a refinery that might as well be making gasoline.

I can't remember why but rapeseed oil is NOT recommended... aka canola. I think I'm going to go with light olive oil but, yes, its hard to decide which is the lesser evil when it comes to mayo and still taste good. There used to be no sugar in commercial mayo and could count on it for Atkins/keto but to my horror a few weeks back was like, "This is too sweet", checked the label and there was the sweetener. Unreal!

@@noeldeal8087 thats the thing. Canola and rapeseed on paper should be the same. But Here in the EU GMO is not allowed as far as I know. It most certainly isnt in the country I live in. Does that mean that producers out side my country doesnt scam? who knows. And you can get organic locally grown cold pressed "virgin" rapeseed oil for less then a quarter for the price of the avocado oil which is almost impossible to get hold of here to start with unless you want to pay 22 dollars for 250ml.

@@thekat268 technically it is the same. But as I wrote. Rapeseed in the EU as far as I know and with 100% gareente not allowed in my country for human consumption. So is it really the same? Not to mention the shelf staple canola you buy is put through a chemical using petrolium hexane solvents. The same chemicals are used in gasoline production. It's about as close to being bio diesel as it gets. Impeller cold pressed rapeseed oil does not undergo this process. Though its probably not as healthy as Olive and avocado oil. It's a hell of lot better then regular canola. Has higher smoke point of avocado oil, which cost 22 dollars for 250ml where I live. So a lot more affordable

Is the viniger used only for preservation? Try with Apple cider vig and white viniger and would not work. Put some lemon juce in and it imulsifyed.

I'm looking forward to making mayonnaise today! Great Video! I use nothing but Extra Virgin Olive Oil, too. For higher temperature cooking, I use the Avocado Oil. I also like using Butter to get the Vitamin D, and Coconut Oil, to make something smell like a Mounds Bar!

Mary you are a DI VINCI of the kitchen! Earlier I watched a video professing “ the perfect immersion Mayo” well needless to say it was horrible never thickened and the taste wasn’t up to my liking! So I wasted those ingredients.I should have known to come to your site where there is literally anything I need to know as well as made very nutrient conscious.Never in a million years would I have thought that the coconut oil would work without imparting its distinct flavors but not even a hint of it ...the sesame oil was a bit more obvious but a delightful change for my chicken salad imparting a slight Asian flavor and I do love Asian foods so this was a doable combo so far.I did add avocado oil as I felt it was a bit lighter in flavor as well as not so heavy and a powdered mustard...next time I will add a bit more apple cider vinegar that I literally drank as a child(mother had to hide it lol).only used one large egg and it thickened beautifully...thank you so much dear lady for all of your explorations and time to educate us all,stay blessed

Local Walmart only has Light mayo , Miracle Whip (should call it Miracle Chem, Good lord ! ) .Fairly recent subscriber, can not wait to make this always wanted to but you know.Thank you. I spent a couple of years in Texas a while back in the Oil Patch, totally fell in love with your State. From Chili to fresh Corpus shrimp i still hanker for Texas cuisine . Oh no! Let's diagnose this together. Did you follow the steps exactly? Sometimes when I help folks diagnose problems, they think they followed the steps exactly but then when we talk it out, it comes up that they did something slightly different. I am here to help. And also, for future reference, know that you did not waste the oil. You can add a small amount of water and continue to whip the mixture and it may come together and congeal. @@MarysNest Thank you, Mary! 😊 ~I used the oil I had on hand: 1/3 melted coconut oil, 1/3 extra light virgin olive oil, and 1/3 avocado oil. I will definitely be trying sesame next go-round! ~I had two large egg yolks separated from the whites I needed for another recipe, so I used those. (Maybe that made a difference?) ~I had no ACV on hand so used white (usually have ACV here, but used the last of it for a batch of Master Tonic) ~Salt as recommended and a tish of Dijon mustard. I used the stick blender, but could not get anything other than liquid. I didn’t THINK the coconut oil was overly warm, but maybe it was? At any rate, last night I put the jar in the fridge, just in case I could think of a different application for it. After reading your comments, I allowed it to come to room temperature, added two tablespoons of water, again used the stick blender and it emulsified BEAUTIFULLY!!! Yay you! Yay me! Yah mayonnaise! :D Thank you again so much for your help. I am loving your videos. Blessings to you!

Chelle A - Wonderful!! I am so happy to hear that you were able to emulsify it with the water. If you just use egg yolks and leave out egg whites, you need to add a teaspoon or two of water to get it to emulsify. The egg whites really make a difference but you can make mayo with just egg yolks...it just tends to be a little thinner…and/or it may not emulsify at all… But adding a little bit of water is the trick. I’m so happy it worked for you!❤️😘❤️

Better than the combo of oils I use Avocado oil. It is a healthy fat and has no unusual flavor.

@@jeanoconnor3163 - Hi Jean, Not sure if it was you or someone else but they suspected that maybe in the past when I made an all avocado oil mayo the the oil I used had turned rancid! It was newly purchased but that can certainly happen! This time, I picked a really nice avocado oil from Whole Foods and I am anxious to give it a try. It will be a nice alternative to my three oil blend. I can rotate so that I am getting a nice mix of healthy oils in out diet. Thanks again for your suggestion. Love, Mary

I just made some using canola and grapeseed oils and my immersion blender. I did not know I could use coconut. I also used pink Himalayan salt and combined apple cider vinegar with some Meyer lemon juice from the tree we have here in the yard. I plan to use your oils combination after mine is gone. Thank you so much for your wonderful tips. One more thing: I just used two whole eggs straight from the fridge. Another recipe stated to use just egg yolks but that did not work for me. It would not emulsify, luckily I hadnt thrown out the whites. That made all the difference in the above recipe I used. I did not have dry mustard and used a wet green mustard from France.

Hi Lala, So happy it worked out. Yes, that is why I recommend using the whole egg. It is very difficult to get homemade mayo to emulsify just using the yolk. So glad you had success!! Love, Mary

Mary I’m just saying thank you SO much for this recipe! 😆 I made it this morning in literally seconds before work. I just LOVE 😍 the consistency! It truly is Mayonnaise. Although I love salt in everything, I think the heaping tsp I added was a little too much, so I’ll be using a little less next time, with a bit more added Apple cider vinegar for more tang, and swapping the sesame oil for something a bit more subtle, as I’m not quite feeling the flavour, and I definitely don’t like the flavour of avocado oil. So maybe I’ll exchange it for something like hemp seed oil, or flaxseed oil. But whatever the case I’m gonna have fun experimenting. So keep the vids coming please Mary. And thanks again. This certainly isn’t gonna last 2 weeks, and I live on my own! 🤩

Be mindful that flax and glaxseed oil is all Alpha lipoic avid and it chelate mercyry really throughly. The problem with that unless you r see move ther virculatikn mercury whichcwas ch we lted from the cells it was in, the toxin c as n lodge in new places and cause all kinds of symptoms anew. I found this out when I made 1 ibgr e dient flaz seed cracker. I lost my short term memory, and got essential tr e mores. I know how to bind it do I mitigated it safrly...but oh noy do I watch multi vits ingredient lists, etc..

I love adding a very small smashed clove of fresh garlic to my mayo. The vinegar also helps to kill any bacteria that might be in the eggs. At least that's what I've heard.

My only drawback with it is that the technique to extract the oil from avocados was only invented in the 1990s and so technically it’s not been used by traditional cultures throughout history. So Sally Fallon of the Weston a Price foundation doesn’t recommend it. ❤️🤗❤️

Thanks for investigating the oils. I'm trying to avoid seed oils as they are so inflammatory to the body, so I switched from using sunflower seed oil to refined (neutral tasting) coconut oil. However, the drawback is that it sets quite solid in the fridge. For now we have the "hard" mayonnaise in a squat tub, it's easier to use this way. It tastes really good and my family are quite accommodating with its quirks.

@@douglaswallace7680 it was much easier to spread when left at room temperature, like firm-ish butter. However, since it was winter here, it wasn't warm enough at room temperature to get to the soft mayonnaise consistency.

I would be concerned about bacteria leaving it out of the refrigerator because of the eggs. Which is a shame because coconut oil is very good tasting.

@@virginiaalt1245 we had no problems but I didn't repeat that recipe. I believe fractionated coconut oil remains liquid even in the fridge, but I don't know the health effects of eating fractionated oils.

Just tried it 5 times. Keeps breaking down to liquid without emulsifying. Tried warming the egg, 2 different vinegars, avocado or grapeseed oil. It worked last week, but I can't get it to work now. I think it starts to form mayo, then breaks down into liquid. I tried low setting - same thing. UPDATE: Got it working. Didn't have enough 'liquid'. Fixed by adding more lemon juice along with the apple cider vinegar.

Hello my friend Mary! Where we’re living now we have no Wi-Fi and very poor cell service but I was able to catch this video when I went into town to grocery shop. I’ve enjoyed making my mayo like this for a long time but I *always always* learn something new with every video of yours that I watch🤩. I’ve never thought to combine the different oils so I’m going to try that. Additionally, I had not thought to add the sweetener to make it more of a salad dressing. I know you said we don't have to drizzle, but I find it helps the oil not to break. I've tried this with whey, just apple cider vinegar, now I'm trying it with half ACV, half pickle juice, and half the salt. It tasted pretty good warm. Let's see how it does cold. 😋

I have made my own mayo a lot but only once mixed coconut and olive oils as it separated due to the coconut oil solidifying during use. It was a bit off-putting for me.

Mary I was on a keto diet for about a month, I got so sick of the coconut flavor in literally everything, I made my mayo from avocado oil. I will try your version now. Maybe I won't taste it so much. I stopped the keto diet because they excluded many nourishing foods which prevent the growth of cancer cells, like buckwheat, which has vitamins B15 and B17 they exclude grains, which are rich in B vitamins and minerals, so I decided just to focus on Nourishing my body with nutrient dense foods and not follow any diets, because they all want you to exclude some nourishing foods. To me it' not about the food you eat but the quality of food you eat. I eat a LOT(majority) of fruit and vegetables, seafood, meats and healthy ancient grains, nuts and seeds, beans, I try to get everything organic and soak them over night like our grandmas did, beans, nuts, seeds, grain, were always soaked. Now I am learning about fermenting and preserving and I do not use any sugar, just raw organic unfiltered local honey, which is antibacterial and very rich in Bvitamins and minerals, enzymes and amino acids and only God knows what other nutrients we are not aware of yet, because we are only limited with our knowledge, as our scientific equipment in a given era

Hi Grace, I understand completely. You can always make the mayo with just olive oil and sesame oil. It's quite nice. And yes, I am with you when it comes to Keto. I was not able to stay on that diet. Like you - I love eating Buckwheat and all the other wonderful foods you mentioned! And yes, honey! I take a teaspoon of local raw honey every evening. It has done wonders for my health!! Love, Mary

Grace Gniazdowska if you are fermenting there is virtually no difference between using honey or sugar as these are both converted to lactic acid by Lactobacillus in the fermentation process. We make our own sauerkraut and kimchi and also grow our own radish sprouts and these are our main vegetable intake. By the way we have been fully keto for 3 years and have both lost a ton of weight and kept it off. Mayonaisse is great for keto but potentially disastrous if you consume carbs. Obesity is a sure sign you need to be on a keto diet. Keto is easy and enjoyable if you learn to do it correctly.

Meat is highest food in VitB lol Honey is just sugar - with very very little vitamins or minerals or anything else Nuts, seeds and beans contain protein, minerals, fat and carbs. All found in much higher amts in meat - except the carbs!

Just made a batch with sunflower oil. The sunflower seed taste was quite strong. Is was enjoyable but perhaps a bit too pronounced for my application (american-style potato/egg salad). I threw in some lemon juice, dijon mustard, salt and pepper and bam! The Mayo has arrived.

Sunflower oil is horribly bad for you, because sunflower seeds have very, very little actual oil in a seed due to their size. It is HEAVILY CHEMICALIZED to produce any amount of oil!!! I didn't know this for a long time, and I figured sunflower seeds were healthy so it must be a healthy oil. NOPE!!! It is a cause of alzheimer's and dementia just like the other "vegetable" oils, i.e. canola, corn, soybean/soy, safflower, grapeseed. A good brand of avocado oil, which should not taste bad and does not taste at all like avocados, is Marianne's Avocado Oil, which you can usually find at Costco or on Amazon. I make avocado oil mayonnaise regularly and love it!!! (And I am a connoisseur of mayo!) Mary, I love that you use a combination of oils that are all healthy to make mayonnaise!!! Thank you! I'm going to try this!

How do you preserve this and what’s the difference between this and commercial store bought?

Great question. I think the biggest difference between this and store-bought mayonnaise is that this version is homemade and contains the ingredients that you want to have in mayonnaise… Primarily made with better oils… And no chemicals. This lasts about two weeks in the refrigerator. Love, Mary❤️🤗❤️

I love love homemade mayo! I have only done it by hand...which you can guess takes for ever! I use lemon juice in lieu of the vinegar, and I do add a few mustard seeds ground, 1 or 2 white peppercorn ground and a tiny tiny pinch of paprika. I am excited to try this method. Thank you Ms Mary! I have learned from experience that when you make the transition from a processed foods kitchen to a traditional foods kitchen you have to make food taste delicious and similar to what you, your family, and your friends are used to. Great wonderful oil Olive and avocado, soybean is terrible for men, seed oils like sesame is not nutritious, Olive oil is peppery and I like it.

@Mary's Nest Thank you so much for sharing this fantastic combination of oils in this recipe! I tweaked it a little bit, though: I also used almond oil to cut down on my olive oil which is rather strong in taste. (All ingredients are organic.) It came out great and, like you said none of the flavors are overpowering. All the best!
