5. Sugar free dates cookies:
Ingredients:
1/3 cup almonds,
1/3 cup walnuts
1/3 cup cashews (can also use pistachios)
1/2 cup medjool Dates
1 cup whole wheat flour/multigrain flour
1/2 cup applesauce (or 1/2 cup butter)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 cup chocolate chips/1/3 cup cocoa powder (optional)
Preheat oven to 350F. Blend the walnuts, almonds and cashews into a coarse mixture. Blend the dates into a paste.
Add 1 cup of the nut powder, 1 cup flour (I used 1/2 cup oatmeal and 1/2 cup whole wheat), salt, baking soda and mix well.
In another bowl, beat the egg, add applesauce/ butter and the dates, and mix well.
Combine with the flour mixture and add chocolate chips or any other toppings.
Place spoonfuls of the batter on a baking sheet and bake for 10-12 minutes or until the tops turn brown. Press slightly if you want a flatter cookie, as these don't spread like regular cookies. Cool completely or serve slightly warm!
