Originally found this spot on Tabelog(食べログ), and have fallen in love ever since...
This ramen restaurant specializes in a broth that mainly consists of scallop broth. Scallops used correctly gives some of the best UMAMI as a base taste, and TAKESHO has definitely mastered the art of making a really good broth. To give the soup an extra flavor, Kombu and chicken is also used to further deepen the soups taste. The noodles itself is also a really good match to the soup and it is very evident that the ramen master here must have spent a lot of time to develop this ramen to this level of perfection.
Definitely worth a visit, if you are seeking a different, special ramen!
